An entire casserole of onions might sound like a lot, but when they’re sweet Vidalia ovens that are cooked down until they’re even sweeter, married with some indulgent creaminess, and there’s a buttery cracker crumb topping to be had… Well, then it just might not be enough. This casserole is southern comfort food at its best and it’s a side dish that gets along with everyone – chicken, steak, turkey dinner, you name it. (To be totally honest, it doesn’t much matter as it usually steals the show.)

In this video, watch Chef Nicole McLaughlin prepare a cheesy dip and a simple roasted onion recipe that will satisfy the veggie lover in all of us. She uses a flavorful southern variety of onion that takes its name from a small town in Georgia, and it can only be can be called a Vidalia if it's grown in one of only 20 counties, so don’t be fooled by any imitators in the grocery store. Serve the dip with crackers or breadsticks, and use the tender roasted onion as a do-it-all side dish.

For this recipe you will need:

2 Med : Vidalia Sweet
1 10.75-oz Can : Cream
Sliced
2 tb : Vegetable Oil
Paprika
1 Large : Chicken Breast; Split
2 Med : Potatoes

Chicken Dressing Casserole
2 pounds boneless chicken breasts, cooked and cubed (or a rotisserie chicken)
Mrs. Dash Onion and Herb Seasoning
2 (10.5 ounce) cans Cream of Chicken Soup
1/4 cup whole milk
1 onion, chopped
2 stalks celery, sliced thin
12 oz. Stove Top Stuffing
2 cups chicken broth
2 sticks butter, melted
Preheat oven to 375°. Spray a 9”x13” inch casserole dish.
Cook chicken breasts, allow to cool slightly, and chop into bite sized pieces. (Or shred a rotisserie chicken.). Spread in the bottom of casserole dish.
Lightly sprinkle the chicken with the Mrs. Dash Seasoning. 
Stir together the soups, milk, onion, and celery. Pour this mixture evenly over the chicken.
In the same bowl, stir together the contents of the Stove Top Stuffing packages, the chicken broth, and the melted butter. Spread the stuffing gently over the soup mixture to cover the top.
Bake at 375° for 40 minutes.

INGREDIENTS
4 chicken breasts
1/2 bottle (3/4 cup) McCutcheon’s Sweet Vidalia Onion Salad Dressing
PREPARATION
1. Place 4 chicken breasts in bowl and cover with 3/4 cup of McCutcheon’s Sweet Vidalia Onion Salad Dressing
2. Use the other 3/4 cup for basting and side sauce
3. Place in the fridge and marinate for 2-4 hours (The longer the more flavorful)
4. Grill, bake, or pan fry your chicken breasts as desired
5.. Use chicken for sandwiches, salads, or an entree
