How To make Walnut Carrot Cake ~
1 1/2 c English Walnuts
3 c All-purpose Flour, sifted
3 ts Baking Powder
2 ts Salt
2 c Brown Sugar, packed
4 Large Eggs
1 c Oil
1 1/2 ts Cinnamon
1 ts Nutmeg
1/4 ts Ground Cloves
3 tb Milk
3 c Carrots, grated
Chop 1/2 walnuts fine. Grease 3 9-inch layer cake pans well. Sprinkle each with about 2 1/2 tablespoons to coat. Chop remaining walnuts a little more coarsely; set aside. Resift flour with baking powder and salt. Combine sugar, eggs, oil and spices. Beat at high speed until light and well mixed. Add HALF of flour mixture; stir until well blended. Add milk, then remaining flour. Stir in carrots and chopped walnuts. Divide batter evenly in pans. Bake at 350 degrees 25 minutes or until cakes test done. Let stand in pans on wire racks 10 minutes. Turn cakes out onto racks to cool. When cold, frost with a butter cream frosting. Decorate with walnut halves. -----

CARROT WALNUT CAKE
Ingredients
1 cup grated carrot
2-3 tbsps chopped walnuts
1½ cups brown sugar
1½ cups oil + for greasing
3 eggs, whisked
1 tsp cinnamon powder
½ tsp nutmeg powder
¼ tsp clove powder
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 tsp vanilla essence
2 cups refined flour (maida)
Fresh rosemary sprigs for garnish
Ready-made butter cream as required
Fresh blueberry halves to serve
Fresh strawberry quarters to serve
Icing sugar for dusting
Method
1. Preheat the oven at 180ºC.
2. Take brown sugar in a large bowl, add oil and beat with an electric beater till the mixture is well combined.
3. Stir in the eggs and continue to beat till light. Add cinnamon powder, nutmeg powder and clove powder and mix well.
4. Add the baking powder, baking soda, salt, carrot, vanilla essence and mix well. Sprinkle the chopped walnuts and mix well.
5. Add the flour and gently fold till well combined.
6. Grease a silicon cake mould with some oil and transfer the batter into it. Tap a few times. Place it in the preheated oven and bake for 35-40 minutes. Take the cake out of the oven and allow to cool to room temperature.
7. Garnish with rosemary sprigs and pipe out the butter cream on the sides and top of the cake. Place some fresh blueberries, strawberries and ust the icing sugar. Cut into wedges. Serve.

Ingredients:
100 grams All purpose flour
2 grams Baking powder
100 grams Butter
100 grams Carrot (grated)
3 number Egg (medium size)
100 grams Sugar powder
2 tsp Vanilla essence
100 grams Walnuts
Directions:
Take a bowl add butter, icing sugar (sugar powder), cream it and add vanilla essence, egg, mix this well, take another bowl add all purpose flour, baking powder, walnuts, carrot grated, mix this with the flour, this one add to the butter mixture and mix it well and transfer into the baking tray and put the walnuts on the top of the cake and bake them at 200 c for 20 to 25 minutes. After that sprinkle some icing sugar and cut them into slices.

My delicious carrot cake recipe is almost too easy to believe and my gosh is it good! The batter has toasted pecans, shredded carrot (of course), and lots of spices! The cake is very moist but not at all oily! Covered in cream cheese frosting and topped with a ring of cute buttercream carrots!

All Purpose Flour 2 Cups (250 g)
Grated Carrots 2 Cups (350 g)
Egg 4 medium sized
Sugar 2/3 to 1 Cup. ( depending on the sweetness you want)/(135g to 200g)
Oil 2/3 Cup ( 150ml)
Vanilla Essence. 1 tsp
Baking Powder. 1&1/2 tsp
Baking Soda 1/2 tsp
Bake in a preheated oven @ 165 C for 60 minutes or until a skewer inserted in the middle comes out clear..

Tin Size:
My load tin is 31cm long and 13cm wide and 8cm in depth. Which holds the same amount as any 2lb loaf tin.
For the Carrot Cake:
225 ml/g Sunflower or Vegetable Oil
120g Caster Sugar
120g Light Brown Sugar
3 Eggs
210g Plain Flour
3/4 tsp Bicarbonate of Soda
3/4 tsp Baking Powder
Good pinch of Salt
1.5 tsp Cinnamon
125g Nuts - I use a mixture of Walnuts and Pecans
175g Carrots
For the Cream Cheese Icing:
50g Unsalted Butter
75g Full Fat Cream Cheese
250g Icing Sugar
