How To make Wednesday's Chili
MM BY H. PEAGRAM:
GLORIA PITZERS SECRET RECIPE:
1 1/2 lb Ground round
2 tb Corn oil
1/2 ts Salt
1 cn Onion soup, 10 oz
1 tb Chili powder
2 ts Cumin powder
1/2 ts Pepper
21 oz Kidney beans, undrained
1 cn Tomato paste, 6 oz
1 cn Tomato sauce, 8 oz
Heat oil in 10" skillet, add crumbled beef, sprinkle with salt. Pack beef firmly in pan, cover, cook over low heat for 20 min. Put onion soup thru blender for 1 min., add to beef, mashing with fork till it looks like rice. Simmer, covered another 5 min. Add chili powder, cumin, pepper. Transfer to a 3 qt pot, add kidney beans, tomato paste and sauce. Heat for another 20 min to allow spices to blend. Gloria Pitzer's Secret Recipe for Wendy's Chili

Tom’s Sweet and Heat Chili
3 pounds hamburger
1 large onion, diced
1 (1.25 oz.) package chili seasoning
1 teaspoon chili powder
46 oz. can tomato juice
8 oz. can tomato sauce
2 (14.5 oz.) cans Ro-Tel diced tomatoes with peppers
Scant 1/4 cup sugar
16 oz. can chili beans, rinsed
Brown the hamburger and onion in a deep kettle.
Drain the grease from the hamburger.
Stir in the packet of chili seasoning and chili powder into the hamburger.
Add the next four ingredients.
Stir in the chili beans.
Simmer for a few minutes. You can eat immediately or it’s even better the next day.

RED LENTIL CHILI (Yield: 14 cups)
Ingredients:
• One pound (453g) of red lentils
• 7 cups (1.75 liters) of water
• 2 (14.5 ounce/396g) cans of salt-free tomatoes, fire roasted preferred
• 1 (6 ounce/169g) can of salt-free tomato paste
• 10 ounces (283g) of chopped onion (approximately one large)
• One pound (453g) of red bell pepper, (approximately 2 large) VERY finely chopped (I use the Cuisinart)
• 3 ounces (85g) of dates (approximately 12 Deglet Noor)
• 8 cloves of garlic, finely minced
• 4 Tablespoons Apple Cider Vinegar
• 1.5 Tablespoons Parsley Flakes
• 1.5 Tablespoons Oregano
• 1.5 Tablespoons Salt-free Chili Powder
• 2 teaspoons SMOKED paprika
• 1/2 teaspoon chipotle powder (or more to taste)
• 1/4 teaspoon crushed red pepper flakes (or more to taste)
Preparation:
Blend the dates, tomatoes, red bell peppers and garlic in a blender and blend until smooth. Place all remaining ingredients in an electric pressure cooker and cook on high for 10 minutes. Alternatively, place all ingredients in a slow cooker and cook on low for 8 hours.
