How To make Westphalian Cheesecake
CRUST:
Shortbread; See Recipe # 22 CHEESECAKE:
1 1/2 c Cottage Cheese; Small Curd
1/4 c Sugar; Granulated
4 Eggs; Large, Separated
1/2 t Vanilla Extract
8 oz Cream Cheese; 1 Pk.
1 t Cornstarch
6 tb Butter
Preheat the oven to 325 degrees F. Press the cottage cheese through a sieve. In a large mixing bowl, cream the butter with the sugar, do not beat, then add the egg yolks and vanilla. Blend until the mixture is light and fluffy. Add the cream cheese, cottage cheese and cornstarch and blend well. In another mixing bowl, beat the egg whites until they form stiff peaks; then fold them into the cheese batter. Pour the mixture into the prepared crust and bake for about 1 hour or until the top is a golden brown. Leave the
cake in the oven to cool for 2 hours then chill.

3.5 oz/ 100 g vegan dark chocolate, grated or chopped

Living in Dorsten close home we have very good german chocolatiers. We arrived in Germany some days ago so we could not order, because most of the times you need to order with many days in advance.
So this time, we went to the closest supermarket and follow our intution. All these brands have a web where you can find their shop and order.
We bought chocolates:
Hachez from Bremen. We bought a 77% Cocoa D´Arriba bar, an easter rabit 60% cacao. In their web I found 58% Ecuador bar, pralines. Achez.de Instagram: @hachezchocolade
Kumpel from Bochum, North Rhine–Westphalia. Kumpel is a brand from Confiserie Ruth seit 1968. We bought a 85% Cocoa, 150gr bar. In their web i found 63% Ecuador bar. Also and Amazonas wild cocoa fine dark chocolate 71%, 80gr bar for €9. Confiserie-ruth.de Instagram: @confiserieruth
