How To make Whisky Fudge Cake
5 c Plain flour
4 ts Baking powder
1 1/4 kg Plain chocolate cut in small
Chunks 750 g Unsalted butter at room temp
5 c Caster sugar
16 Eggs separated
1 1/4 c Whisky slightly warmed
4 ts Vanilla extract
TO SERVE: Icing sugar Clotted cream Preheat the oven to 180c. Line 2x20cm springorm pans with baking paper, then butter and flour the paper. Sift together the flour and baking powder. Then melt the chocolate in a bowl over simmering water and set aside in a warm place. Beat the butter until white and creamy, then gradually add 4 cups of the caster sugar and continue beating until the mixture is fluffy. Beat in the egg yolks one at a time, then add the whisky and vanilla. Stir in the melted chocolate, then fold in half of the sifted flour, mix well, then fold in the remaining flour. Beat the eggwhites until soft peaks form, then gradually add the remaining cup of sugar and beat until the mixture is shiny and forms stiff peaks. Stir in a little of the chocolate mixture, then fold in the remainder. Pour the mixture into the springform pans and bake in the oven for 1 hour. Remove from the oven, turn the cakes out immediately onto a cake rack and set aside to cool. To serve: cut the cakes into wedges and place on each serving plate. Serve with clotted cream. Chocolate Whiskey Fudge Gelato
To make Chocolate Whiskey Fudge Gelato scale into a small saucepan 60g cane sugar,125g hi-fat cream, 275g milk and bring to a simmer. Chop up a 100g dark chocolate bar and place it in a mixing bowl, then pour the hot cream mixture over top to melt it. Keep stirring until the chocolate has completely melted into the cream and add 15ml of Jack Daniels Tennessee Whiskey. Pour the mixture into a large jar and refrigerate until chilled through. Then freeze in a gelato machine. When the gelato is coming away from the bowl and looks like soft serve it is the perfect time to eat this very decadent gelato treat.

Ingredients
24 oz milk chocolate chips
1 cup sweetened condensed milk
1 tsp vanilla extract
1/4 cup whiskey (add more if needed)
2 cups chopped pecans
Directions:
1.Line and 8 inch baking pan with aluminum foil and grease the foil.
2. Combine chocolate chips and sweet condensed milk in a saucepan over medium heat. Stir frequently until almost melted remove from heat and continue to stir until smooth. When chips are completely melted stir in the vanilla extract , whiskey and chopped pecans.
3. Spread evenly into bottom of the prepared pan chill for two hours or over night then cut into squares.

Dark Chocolate Maple Whisky Cake Recipe || IN THE KITCHEN WITH DEE
One of the most delicious cakes I've ever made!
RECIPE:
Ingredients:
Cake:
6 eggs (separated, keep both!)
1 cup butter (I used salted)
1 1/2 cup sugar
3/4 cup whiskey
1 big bar of dark chocolate (300g)
1 1/2 cup flour
2 tsp baking powder
1/3 cup cocoa powder
Dark Chocolate Ganache:
2 bars (100g each) of dark chocolate
3/4 cup heavy/whipping cream
Instructions:
1. Separate your eggs, and beat the egg whites until soft peaks form.
2. Melt chocolate over a bowl in boiling/simmering water.
3. In it’s own bowl, sift flour, cocoa powder, baking powder.
4. Beat butter and sugar until creamy.
5. Incorporate egg yolks one at a time into the butter/sugar mixture.
6. Add whiskey and melted chocolate.
7. Fold in flour mixture, then egg whites.
8. Pour batter into two cake pans and bake for 350F for an hour or until toothpick comes clean in the middle.
9. Cool cakes on a cooling rack.
10. Pour cream into sauce pan and bring to a boil.
11. Break up chocolates into small pieces and place into a heat resistant bowl.
12. Pour boiling cream over the chocolates and let stand for 2 minutes (DO NOT STIR!)
13. After two minutes, whisk chocolate and cream until blended. Let ganache stand or put into the refrigerator until thick enough to use as icing.
14. Slice tops off cake tops, slather ganache over top of one cake top. Put second cake top on top and begin to decorate your cake!
