How To make Whole Wheat Irish Soda Bread
-BETTIE COOPER VGXB82A 1 1/8 c Bread flour
1 1/8 c Whole wheat flour
1 ts Salt
1 tb Butter
1/2 c Raisins
1 ts Baking soda
1 c Buttermilk
2 tb Caraway seeds
1 1/2 ts Yeast
The only difference besides the whole wheat flour, is that this recipe has no sugar at all...wonder why!? My Panasonic machine has a setting for making Whole Wheat Bread and this recipe is for making the Whole Wheat Irish Soda Bread that I tried yesterday. It was a big hit!! BETTIE COOPER (VGXB82A)

Irish Soda Bread

Ingredients
4 cups all-purpose flour, plus extra for currants
4 tablespoons sugar
1 teaspoon baking soda
1 1/2 teaspoons kosher salt
4 tablespoons (1/2 stick) cold unsalted butter, cut into 1/2-inch dice
1 3/4 cups cold buttermilk, shaken
1 extra-large egg, lightly beaten
1 teaspoon grated orange zest
1 cup dried currants
Directions
Preheat the oven to 375 degrees F. Line a sheet pan with parchment paper.
Combine the flour, sugar, baking soda, and salt in the bowl of an electric mixer fitted with the paddle attachment. Add the butter and mix on low speed until the butter is mixed into the flour.
With a fork, lightly beat the buttermilk, egg, and orange zest together in a measuring cup. With the mixer on low speed, slowly add the buttermilk mixture to the flour mixture. Combine the currants with 1 tablespoon of flour and mix into the dough. It will be very wet.
Dump the dough onto a well-floured board and knead it a few times into a round loaf. Place the loaf on the prepared sheet pan and lightly cut an X into the top of the bread with a serrated knife. Bake for 45 to 55 minutes, or until a cake tester comes out clean. When you tap the loaf, it will have a hollow sound.
Cool on a baking rack. Serve warm or at room temperature.

I began milling wheat just about 2 months ago and I started with my Vitamix Wet Container which worked pretty good. However I did finally purchase a Mill and the results are a bit better with a finer flour. With only adding a bit more liquid to this recipe I had a perfect Irish Soda Bread. Fresh milled wheat can be more thirsty than all purpose flour so you may want to go with the 1 1/3 cup of buttermilk first and see if it is hydrated enough, if not add a bit more to be able to knead and form a nice round loaf!
Irish Soda Bread
4 cups sifted Fresh Milled Soft White Wheat Berries with Bran added back in OR all-purpose flour - I use Azure Market Organics Soft White Wheat - link below
¼ cup granulated sugar - I use Azure Market Organics Cane Sugar, Organic - link below
1 teaspoon salt
1 teaspoon baking powder
¼ cup butter
1 2/3 cups raisins
1 1/3 cup buttermilk plus 1/4 cup for the Fresh Milled Wheat
1 egg unbeaten
1 teaspoon baking soda
1 egg yolk
Directions
Heat oven to 350 degrees. Grease 2-quart casserole dish.
In large bowl sift flour, sugar, salt, and baking powder. Cut in butter. (I use a box grated to grate in the cold butter.) Rub butter into flour with fingertips until a coarse meal forms. Stir in raisins. In a separate bowl combine buttermilk, egg, and baking soda. Stir into flour mixture until just moistened. Turn mixture onto lightly floured surface. Knead lightly and shape into a ball. Place in greased casserole dish. Brush with beaten egg yolk. Bake 1 hour or until done and a toothpick inserted comes out clean. Cool in pan 10 minutes. Remove from pan to wire rack to cool completely before slicing.

LOCKDOWN BREAD- No Yeast, No egg Wheat Bread | Irish Soda Bread | homemade no yeast bread recipe
A lot of you have been asking me to make a bread here on my channel, without any yeast or eggs! I understand that we are not getting bread so easily because of the lockdown but worry not- I’ve got you covered! This Irish Soda bread is extremely simple and very quick. The texture is slightly different from the commercial breads we are used to eating but I love this one for the crusty top and the soft crumb.
I know a lot of you would want to make this bread completely with whole wheat flour. Doing that will make your bread a little more dense but if that’s a compromise you’re ready to make- you could definitely give it a shot!
If you don’t want to add any butter- skip it and increase the quantity of milk by 1/4 cup. Add a teaspoon of salt.
You can add any flavour/ seasonings of your choice- the recipe I’ve shared here is a simple basic bread.
