10c yellow squash, sliced
1 large onion, sliced
4c chicken or vegetable stock
2c water
4 oz. cream cheese, softened
1/4c mayo
1/2c sour cream
1 slightly beaten egg
1/2t garlic powder
1/2t onion powder
Salt and Pepper to taste
2c shredded cheddar cheese
1c shredded parmesan cheese
1 sleeve Ritz crackers
Paprika

I always make it a point to roast my squash rather than to boil it in water, I want to to keep the nutrients and add perfect texture making it a beautiful dish, family and friends including children love the cheesy bacon flavor wuth the crispy Panko topping in this casserole. You will love being able to prepare this casserole early in the day then having it ready in the refrigerator for same day evening meal. I bake it in the oven at 350° for 25-30 minutes till cheese is melted. ❤
INGREDIENTS
5-6 small /medium yellow squash (small/medium cubes)
4 thick cut bacon slices (chopped)
3/4 small onion (diced)
1 Tbsp bacon grease for roasting (as needed)
1/2 orange bell pepper (diced)
pepper (to your liking)
salt (to your liking)
Freshly grated Sharp cheddar cheese (2 & 1/2 C. (as needed)
1/2 C. Mayonnaise
1/2 C. Sour cream
non stick spray
TOPPING
1 Tbsp melted butter
1/3 C. Panko bread crumbs
