Tandoori Chicken Karahi
Serves 4-5
Recipe in English:
Ingredients:
-Chicken ½ kg
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Lemon juice 1 & ½ tbs
-Namak (Salt) 1 tsp or to taste
-Zarda ka rang (Yellow food color) 1/4 tsp
-Dahi (Yogurt) ½ Cup (room temperature)
-Lal mirch powder (Red chili powder) 1 tsp or to taste
-Dhania powder (Coriander powder) ½ tbs
-Haldee powder (Turmeric powder) ½ tsp
-Garam masala powder 1 tsp
-Lal mirch (Red chili) crushed 1 tsp
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Rafhan corn oil 1/4 Cup
-Tamatar (Tomatoes) blanched & pureed 2-3 large
-Koyla (Charcoal) for smoke
-Adrak (Ginger) julienne
-Hari mirch (Green chilli) 1-2
-Hara dhania (Fresh coriander) chopped
-Kasuri meethi (Dried fenugreek leaves)
-Adrak (Ginger) julienne
Directions:
-In bowl,add chicken,ginger garlic paste,lemon juice,salt,yellow food color,mix well and marinate for 30 minutes.
-In bowl,add yogurt,red chili powder,coriander powder,turmeric powder,garam masala powder,red chili crushed,cumin seeds,whisk well & set aside.
-In wok,add corn oil,marinated chicken,mix well and fry for 10-12 minutes.
-Add blanched & pureed tomatoes and mix well.
-Now add spiced yogurt and mix well,cover and cook on low flame for 6-8 minutes then cook on high flame until oil separates.
-Give a charcoal smoke for 2 minutes.
-Add ginger,green chili and fresh coriander.
-Add dried fenugreek leaves,ginger & serve!

-Bowl mein chicken,adrak lehsan paste,lemon juice,namak aur zarda ka rang dal ker ache tarhan mix karein aur 30 minutes kliya marinate ker lein.
-Bowl mein dahi,lal mirch powder,dhania powder,haldee powder,garam masala powder,lal mirch crushed aur zeera dal ker ache tarhan whisk ker lein & side per rakh dein.
-Karhai mein corn oil aur marinated chicken dal ker ache tarhan mix karein aur 10-12 minutes kliya fry ker lein.
-Blanched & pureed tamatar dal ker ache tarhan mix karein.
-Ab spiced dahi dal ker ache tarhan mix karein aur dhak ker halki ancch per 6-8 minutes kliya paka lein phir tez ancch per oil alag ho janay tak paka lein.
-2 minutes kliya koyla ka dhuwan dein.
-Adrak,hari mirch aur hara dhania dal dein.
-Kasuri meethi aur adrak dal ker serve karein!

Yogurt Chicken Roast
Servings - 2 - 3
INGREDIENTS
Chicken legs - 450 grams
Black pepper - to taste
Salt - to taste
Lemon juice - to taste
Yogurt - 370 grams
Garlic - 1 tablespoon
Coriander - 1 tablespoon
Lemon zest - 1/2 teaspoon
Chilli flakes - 1 teaspoon
Lemon juice - 1 tablespoon
Mixed herbs - 1 teaspoon
Salt - 1/2 teaspoon
Black pepper - 1/2 teaspoon
Olive oil - 1 teaspoon
Olive oil - for brushing
PREPARATION
1. Take chicken legs and make incisions on them.
2. Sprinkle black pepper and salt. Drizzle lemon juice and rub well.
3. Marinate 10 - 15 minutes.
4. In a mixing bowl, add 370 grams yogurt, 1 tablespoon garlic, 1 tablespoon coriander, 1/2 teaspoon lemon zest, 1 teaspoon chilli flakes, 1 tablespoon lemon juice, 1 teaspoon mixed herbs, 1/2 teaspoon salt, 1/2 teaspoon black pepper and mix well.
5. Add the chicken legs, 1 teaspoon olive oil and mix it well.
6. Marinate for 3 hours.
7. Take a baking tray and brush them with olive oil.
8. Place the chicken legs on the tray and apply the leftover marinade on them. Spray some more olive oil on top.
9. Preheat the oven to 350°F/180°C. Bake for 30 minutes.
10. Serve hot.

►Ingredients for the Tandoori Chicken
►For the Chicken
Whole Chicken (1.5 kg / 3.3 lb)
1.5 tsp salt
1.5 tsp black pepper
Lemon
►For the Tandoori Marinade
2 tbsp tandoori masala
1 tbsp coriander powder
2 tsp cumin powder
1 tsp red chili
5 tbsp Yogurt
1/2 tsp red food coloring
5 tbsp oil
►For the Sauce
Leftover juices from the chicken
Mix in some yogurt
Salt to taste
►For the Rice
1 large onion
5 garlic cloves
15g ginger
2 Green chilies
1 tomato
2 large cooking spoons of oil
1 tsp red chili
1 tsp coriander powder
1/2 tsp black pepper
1 tsp salt
3 cloves
5 black peppercorns
1 inch cinnamon stick
1 black cardamom
3 green cardamom
1 bay leaf
2 tsp cumin seeds
3.5 cups chicken stock
2.5 cups basmati rice that were soaked in water for 30 min

5 chipotle pepper in adobo sauce
2 Tbsp honey
1/4 cup neutral oil
1/4 cup sriracha or hot sauce

Seasoning mix:
2 tbsp chipotle chili powder, garlic, onion, smoked paprika
1 tbsp black pepper, turmeric
