Tandoori Chicken
Ingredients
• 1 Medium chicken
First Marinade
• Salt
• 1 tsp red chilli powder or to taste
• 2 tbs. lemon juice
• Butter for basting
Second Marinade
3 tsp. yoghurt
• 3 tsp. cream
• 3 tsp.ginger garlic paste
• 1/2 tsp. cumin powder
• 1/4 tsp garam masala
• 1/2 tsp. saffron
• 1 drop orange color
1. Remove skin, clean and wash chicken. Make two to three deep incisions each on the breasts, legs and thighs and marinate with salt, chilli powder and lemon juice. Keep aside for 15 minutes.
2. Whisk yoghurt in a large bowl, add the remaining ingredients and mix well. Rub the chicken with this mixture. Keep aside for four hours or overnight if desired.
3. Preheat oven to 350deg F. Skewer the chicken and keep a tray underneath to collect the drippings or roast in a hot tandoor or pre-heated oven till the moisture evaporates and it starts leaving oil. Baste with butter, if required.
4. .Cut the tandoori chicken into desired sized pieces and serve with sliced onion, lemon, green salad and naan or any bread of your choice.

Tandoori Chicken Karahi
Serves 4-5
Recipe in English:
Ingredients:
-Chicken ½ kg
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Lemon juice 1 & ½ tbs
-Namak (Salt) 1 tsp or to taste
-Zarda ka rang (Yellow food color) 1/4 tsp
-Dahi (Yogurt) ½ Cup (room temperature)
-Lal mirch powder (Red chili powder) 1 tsp or to taste
-Dhania powder (Coriander powder) ½ tbs
-Haldee powder (Turmeric powder) ½ tsp
-Garam masala powder 1 tsp
-Lal mirch (Red chili) crushed 1 tsp
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Rafhan corn oil 1/4 Cup
-Tamatar (Tomatoes) blanched & pureed 2-3 large
-Koyla (Charcoal) for smoke
-Adrak (Ginger) julienne
-Hari mirch (Green chilli) 1-2
-Hara dhania (Fresh coriander) chopped
-Kasuri meethi (Dried fenugreek leaves)
-Adrak (Ginger) julienne
Directions:
-In bowl,add chicken,ginger garlic paste,lemon juice,salt,yellow food color,mix well and marinate for 30 minutes.
-In bowl,add yogurt,red chili powder,coriander powder,turmeric powder,garam masala powder,red chili crushed,cumin seeds,whisk well & set aside.
-In wok,add corn oil,marinated chicken,mix well and fry for 10-12 minutes.
-Add blanched & pureed tomatoes and mix well.
-Now add spiced yogurt and mix well,cover and cook on low flame for 6-8 minutes then cook on high flame until oil separates.
-Give a charcoal smoke for 2 minutes.
-Add ginger,green chili and fresh coriander.
-Add dried fenugreek leaves,ginger & serve!

-Bowl mein chicken,adrak lehsan paste,lemon juice,namak aur zarda ka rang dal ker ache tarhan mix karein aur 30 minutes kliya marinate ker lein.
-Bowl mein dahi,lal mirch powder,dhania powder,haldee powder,garam masala powder,lal mirch crushed aur zeera dal ker ache tarhan whisk ker lein & side per rakh dein.
-Karhai mein corn oil aur marinated chicken dal ker ache tarhan mix karein aur 10-12 minutes kliya fry ker lein.
-Blanched & pureed tamatar dal ker ache tarhan mix karein.
-Ab spiced dahi dal ker ache tarhan mix karein aur dhak ker halki ancch per 6-8 minutes kliya paka lein phir tez ancch per oil alag ho janay tak paka lein.
-2 minutes kliya koyla ka dhuwan dein.
-Adrak,hari mirch aur hara dhania dal dein.
-Kasuri meethi aur adrak dal ker serve karein!
