This trend made Zucchini Bread, as well as Carrot Cake, very popular. And true to its name, Zucchini Bread does contain grated zucchini, as well as grated apple. Both of these ingredients, along with oil, give the Zucchini Bread a wonderfully moist texture. Add to that chopped nuts, dried coconut, ground cinnamon and nutmeg, and it's easy to see why this quick bread has stood the test of time.

OLD SCHOOL ZUCCHINI BREAD(ingredients used from my imperfect foods items)
This is a easy awesome recipe for zucchini bread
you can eat it with butter or like i do some time cream cheese and smoke salmon
RECIPE
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon allspice
2 eggs large
1 cup packed brown sugar
½ cup granulated sugar
1/2 cup apple sauce
1/2 cup vegetable oil
1 tablespoon vanilla extract
2 cups zucchini grated,
1 1/2 cup chopped walnuts
Instructions
Preheat oven to 350F. Line a 9x5 Inch loaf pan with parchment paper or butter and flour It.
Shred two cups of zucchini and set aside. Toast the walnuts and give them a rough chop.
Add the flour, salt, baking soda, baking powder, cinnamon, and allspice to a large bowl then whisk together to combing and set aside. I always sift my dry ingredients but it is not a must do for this recipe.
Beat eggs, and both sugars in a bowl until lighter in color and have a thicker consistency. Add the apple sauce, oil, and vanilla then mix to combine.
Pour the wet mixture into the dry then stir until almost combined. Add the walnuts and zucchini fold in until distributed.
Pour batter into the prepared loaf pan and bake at 350F for one hour or until a skewer inserted into the center comes out clean. If you oven runs a bit cool bake at 375 for 10 minutes then lower to 350F for the remaining 50 minutes or so.

INGREDIENTS
2 cups (260 g) all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp coarse salt (1/2 tsp if using fine salt)
1 1/3 cup (265 g) light brown sugar (packed)
1 1/2 tsp ground cinnamon
2 cups (305 g) zucchini (grated)
1/2 cup walnuts or pecans (optional)
2 large eggs
1/2 cup (118 ml) cooking oil
1/2 cup (118 ml) milk
1 1/2 tsp vanilla extract
9 x 5 x2 loaf pan
Bake at 350ºF / 176ºC for 45 to 50 minutes or until a toothpick comes out clean
If using an 8 x 4 x 2 loaf pan bake for 55 to 60 minutes

Moist Zucchini Bread - Super Healthy and Easy
Zucchini Sweet Potato Raisin Bread
A very special nut bread with Sneaky sweet potatoes, raisins and zucchini added.
INGREDIENTS
1/2 cup sugar
1/2 cup light brown sugar
1 cup canola oil
3 large eggs
2 teaspoons vanilla extract
3 cups unbleached flour
1 teaspoon baking soda
1 teaspoon baking powder
1 tablespoon ground cinnamon
2 cups grated fresh zucchini squash, drained
1 cup Sweet Potato Puree (see easy recipe link below)
3 cups California raisins
PROCEDURE
Preheat oven to 350°F. Grease and flour two 5 x 9 x 2 1/2-inch loaf pans or 24 muffin cups; set aside.
Blend sugars, oil and eggs together in that order. Beat for 5 minutes; add vanilla and beat for 1 minute more. Mix dry ingredients together until evenly blended; stir into sugar mixture and mix well. Add zucchini and mix thoroughly. Stir in raisins and walnuts; mix well. Bake loaves at 350°F, at least 1 hour and muffins about 45 minutes, until toothpick inserted in center comes out clean.
Yields:
2 loaves or 24 muffins
