White Cheddar Ice Cream Log recipe for Nancy Drew: Treasure in the Royal Tower
Do you love cheese? Today may put that love to the test- or perhaps not. Give our most debatable recipe a try and let us know if you liked it or not!
White Cheddar Ice Cream Log
1¾ cups Heavy Cream
1½ cups Milk
¾ cup Sugar
1 tsp. Vanilla Extract
6 large Egg Yolks, beaten
6-8 oz White Cheddar Cheese, shredded
¼ cup Brown Sugar
3 Tbsp Butter
1 Apple, diced (such as Granny Smith or Pink Lady)
Heat the milk with 1½ cups cream over medium-low heat until steaming. Add the sugar and stir until dissolved. Remove from heat and slowly whisk 1 cup of the mixture into the egg yolks. Pour the egg mixture back into the saucepan and cook over low heat until steaming and slightly thickened. Remove from heat. Stir in the vanilla and cheese, then pour through a fine strainer into a large bowl. Cool to room temp in an ice bath, then press a piece of plastic wrap onto the surface and chill in the fridge for several hours. Once fully cold, transfer to an ice-cream machine and process until almost set. Line a baking dish with plastic wrap, then pour in the ice-cream mixture and freeze until almost hard. Lift it out using the wrap and roll into a tight log, letting it soften slightly first if needed. Return to freezer until hard.
Meanwhile, cook the apple and butter in a pan over medium heat until almost tender. Add the brown sugar and remaining ¼ cup cream and bring to a boil. Cook for another minute or two, then remove from heat and let cool.
Once the ice-cream log has set, slice into portions and serve with the apple caramel sauce.

FALL SHOPPING & BAKING! | CINNAMON APPLE PECAN BREAD
Hey family!! In today's video we're making Cinnamon Apple Pecan Bread and we finally find some new fall things at Dollar General!
Cinnamon Apple Pecan Bread:
INGREDIENTS
1 3/4 cups all purpose flour
2 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
1 teaspoon baking powder
2 eggs
3/4 cup sugar
1/3 cup vegetable oil
2 tablespoons applesauce
2 cups finely chopped peeled apples
For the topping: NOTE: I used our candied pecans instead here.
1 cup chopped toasted pecans
1 tablespoon sugar for sprinkling the top
1/4 teaspoon ground cinnamon
NOTE: I also added 1 tablespoon of buttermilk
INSTRUCTIONS
Preheat oven to 350 degrees. Grease a loaf pan.
In large bowl mix together flour, cinnamon, nutmeg, salt and baking powder.
In medium bowl mix together eggs, sugar, vegetable oil and applesauce.
Add wet ingredients to dry and mix just until incorporated. Fold in apples and half of the pecans. Combine remaining pecans, 1 tablespoon of sugar, and 1/4 teaspoon ground cinnamon; sprinkle over loaf.
Bake in the preheated oven until a toothpick inserted in the center of the bread comes out clean, 55 to 60 minutes. Invert to remove loaf as soon as possible.
NOTE: I only wanted the pecans on top, so I didn't add any in the mix.

Recipe
Makes 24 bars (one 9-inch/23 cm square pan)
Prep Time: 10 minutes
Cook Time: 45 minutes
Ingredients
1 cup (250 mL) 1% or 2% milk
2 Tbsp (16 g) ground flaxseed
6 Tbsp (90 mL) pure apple butter
6 Tbsp (90 mL) pure maple syrup
2 Tbsp (30 mL) vegetable oil
1 large Cosmic Crisp apple, peeled and coarsely grated
2½ cups (250 g) regular rolled oats (certified gluten-free, if needed)
2 tsp ground cinnamon
½ tsp baking powder (certified gluten-free, if needed)
1 cup (150 g) raisins
Directions
1. Preheat the oven to 350°F (180°C). Lightly grease a 9-inch (23 cm) square pan and line it with parchment paper so that the paper comes up the sides of the pan.
2. Whisk the milk and flaxseed together in a bowl and let sit for 5 minutes. Whisk in the apple butter, maple syrup and oil until smooth, then whisk in the Cosmic Crisp grated apple. Stir in the oats, cinnamon and baking powder until combined. Stir in the raisins.
3. Spread the batter into the prepared pan and bake for about 45 minutes, until firm when gently pressed. Cool the pan on a cooling rack completely.
4. To serve, lift out the parchment paper and portion the square into bars. The bars will keep in an airtight container in the fridge or well wrapped in a lunch bag at room temperature for up to 1 week. They can also be wrapped in plastic and frozen after slicing. A frozen bar packed into a lunch bag will thaw gradually throughout the morning.
