How To make Guajillo Salsa
1/2 lb Dried Guajillo Chiles
3 c Water
5 Large Cloves Roasted Garlic
1 ts Ground Cumin
1 ts Salt
1/2 lb Roma Tomatoes
2 ts Toasted Pumpkin Seeds
1/2 c Cider Vinegar
1 ts Mexican Oregano
-roasted and ground : GENERAL INStrUCTIONS ON HOW TO REHYDRATE DRIED CHILES: Stem and seed the chiles, then place them in a skillet, on a comal, or in a 250 degree oven and dry-roast them for 3 or 4 minutes. Shake them once or twice and be careful not to scorch them or else they will taste bitter; this in turn will make sauce taste bitter. The chiles should then be added to water that has been heated t just below the boiling point, if it is boiling, the chiles will lose flavor. Use just enough water to cover the chiles and press them down with a lid. Allow them to sit for 20 minutes or until they are soft. At this point, you should taste the water to see if it is bitter, discarding it if it is. The chiles can then be used as directed in the recipe. : METHOD: Remove stems from the Guajillo. Roast and rehydrate the chiles. Puree with the remaining ingredients. To use as a sauce, heat 2 tb peanut oil or lard in a high-sided pan and refry sauce at a sizzle for 3 to 5 minutes, stirring continuously. Add a little water if necessary. ~--

3/4 cup water
2 Roma tomatoes
5 pasilla chiles
30 chiles de árbol (also known as bird's beak chile and rat's tail chile)
3 dried Habanero peppers
16 garlic cloves
10 peppercorns or 1 tsp black pepper

Guajillo Salsa Recipe
Ingredientes:
15 Guajillo chiles, deseeded.
3 Roma tomatoes, boiled, peeled
1/2 White onion, chopped
5 Garlic cloves, peeled
1 tsp. Salt
1/2 tsp. Ground black pepper
2 c. Water
1 tbsp. Olive oil
Instructions:
1. In a comal to medium -hi heat toast the guajillo peppers, for about 2 minutes both sides.
2. Cut and deseed them.
3. In a recipient put the peppers, add boiled water and let them rehidrate for obout 10 minutes.
4. In a sauce pan medium-hi heat boil Roma tomatoes.
5. In a blender place guajillo peppers, boiled tomatoes, choped onion, garlic cloves, salt and pepper and add 2 cups of water of guajillo chiles were rehidrated.
6. And grind all ingredients until to get a smooth sauce.
7. Strain very well and them in a sauce pan add the olive oil and fry the sauce and its all. And ready to serve for enchiladas, sunny side up eggs etc.

In this episode, we wanted to make something simple, but hearty. A little taste of home. We are making Beef with Mexican Chile Guajillo. If you’ve cooked with us before, you should have all the main ingredients: dried Guajillo and Ancho peppers. Before we start, just want to mention, we added a little something extra for this episode! We wanted to share how we make mexican rice as an excellent side dish to this guisado (stew). Enjoy!

1 cup of rice
1 Tomato
1 onion (1/2 for the rice and 1/2 for the meat)
Tomato seasoning
Chicken broth seasoning
1lb meat
10 Guajillo Chilis
2 Ancho Chilis
