How To make Couscous with Zucchini
Ingredients
3
each
zucchini, small, sliced
1
each
onion, sliced
3
cup
stock, vegetable, or chicken stock
1
seasonings, curry, garlic or Mrs. Dash
2
cup
couscous
Directions:
Bring stock, onion & zucchini to a boil, simmer 15 or 20 minutes. Add couscous. Turn off heat. Let stand 5 or 10 minutes.
Serves 2 as main dish or 4 to 6 as side dish.
Notes: this is pretty basic, use your favorite veggies, mushrooms, carrots, green beans, anything. You can't go wrong. Quick and easy.

Einfach Weltklasse. 10 Minuten Mein Sohn könnte Ihn mehrmals in der Woche essen und den gefallen mache ich ihm auch. Günstig, einfach, lecker & schnell genau richtig. Für ein Grill Anlass, für Vegetarier und Veganer. Mit so wenig Aufwand wird auch euch der Salat gefallen. Die Sweet Chilisauce gibt den ganzen einen unglaublichen leckeren Abgang. Probiert es unbedingt, dann werdet ihr mich verstehen und gebt mir bitte ein Feedback wie der Salat für euch ist. Es sind alles einfache Zutaten die man fast immer zuhause hat. Schnell, einfach. 200g Couscous
200ml Gemüsebouillon
Ca 170-200g Gurke
2 Stück Paprika
1 EL Tomatenmark
2 EL Sweet Chili sauce
Frische Kräuter
Gewürze
2 EL Essig
1 Zwiebel

I make various types of Couscous which can be served with any type of grilled/fried/roasted chicken, meat fish or even halloumi or vegetables. This particular version of Couscous has courgette in it. You can substitute it for any other vegetable of your choice or leave it out totally.

Make couscous according to packet instructions (usually just double quantity boiled water to couscous, salt and olive oil) and add some fresh lemon juice to it. In a pan, sauté ginger and garlic, then add salt, chilli flakes and some ketchup. Next add diced courgette and mixed peppers and cook for few minutes before adding diced red onion. Take off the heat and add the vegetable mixture to the prepared couscous. Mix well and finish with fresh coriander. Enjoy!

You won’t fry the #zucchini anymore! Make this #recipe and everyone will be amazed.
Ingredients
1 cup Couscous
1 1/2 cup hot water
2 large #zucchini sliced
2 #carrots sliced
2 big #potatoes sliced
1 can chickpeas
1 large onion
7-8 cloves of garlic
2 pieces of ginger
1 tablespoon olive oil
2 tablespoons papita seeds
2 tablespoons sunflower seeds
1 teaspoon corriander powder
1 teaspoon cumin powder
1 teaspoon salt
3 tablespoons tomato paste
Juice of 1 lemon
Method
Take a pot with lid, add couscous and hot water, cover and set aside. Optional you can add 1-2 tablespoons of fresh olive oil.
Microwave potatoes for 4 minutes
In a skillet or pan add oil and stir fry potatoes till golden and crunchy.
Fry chopped onion garlic and ginger add seeds and keep frying for few minutes.
Now add and fry coriander, cumin powder and salt.
Add tomato paste and stir.
Add chickpeas and give good 5 minutes of stirring and frying.
Empty the pan and before serving add carrots and zucchini, cover with lid for 5 minutes till bit soft.
All ready- serve your lunch with couscous boiled vegetables and chickpeas and lemon juice/chutney.
