Our bean farmer, Jack, took a tour around the Victoria production facility to see what's behind the curtain (so to speak) for the VG burger.
He saw a lot of veg (if you haven't heard, here's what was used in 2020)... 34,797 onions, 47,148 carrots, 234,786 mushrooms, 17,800 beets, 128,400 garlic cloves, 20,706 celery stalks... and, since we butcher them, 26.5 million black beans.

Slimming World vegan bhaji burger recipe - 8½ Syns each (deduct 6 Syns if using Healthy 'b' choice)

Serves 4
8½ Syns each (deduct 6 Syns if using Healthy 'b' choice)
1 large onion, thinly sliced
1 large sweet potato, peeled and grated
1 large carrot, grated
2cm piece fresh root ginger, peeled and grated
½-1 red chilli, deseeded and finely chopped
2 tsp mild curry powder
50g gram flour (also known as chickpea flour)
zest and juice of 1 unwaxed lime
low-calorie cooking spray
4 x 60g wholemeal rolls, split
sliced lettuce, cucumber, tomato
and roasted red peppers in brine from a jar, to serve
Preheat your oven to 200°C/fan 180°C/gas 6.
Put one-quarter of the onion in large bowl and add the sweet potato, carrot, ginger, chilli, curry powder, flour and lime zest. Add the lime juice and 1-2 tbsp cold water and mix well. You want the mixture to hold together when pressed.
Squeeze the mixture into 4 large balls, then put them on a non-stick baking tray and flatten into burger patties. Spray with low-calorie cooking spray and bake for 25-30 minutes or until golden and cooked through, turning them carefully halfway.
Meanwhile, place a non-stick frying pan over a medium heat and cook the remaining onion with 3 tbsp cold water for 5 minutes or until softened, stirring occasionally. Spread the onion out on a non- stick baking tray, spray with low-calorie cooking spray and bake below the burgers for 15-20 minutes or until crispy, stirring halfway.
To make the sauce, mix the soya yogurt with the chutney and divide between 4 small pots.
Fill the rolls with lettuce, cucumber, tomato, a bhaji burger, the crispy onions and the red pepper. Serve with Slimming World chips salad and sauce.

Ingredients -
Chicken Marinade -
2 or 4 - Large Boneless & Skinless Chicken Thighs
1 Cup (250ml) - Buttermilk
1 Tbsp (20ml) - Sriracha Sauce (Optional)
1 tsp (2.5g) - Smoked Paprika
1 tsp (2.5g) - Onion Powder
1 tsp (2.5g) - Garlic Powder
Seasoned Flour Mix -
1 1/2 Cups (225g) - Plain (All Purpose) Flour
3 Tbsp (35g) - Corn Flour or Starch
1 tsp (2.5g) - Smoked Paprika
1 tsp (2.5g) - Onion Powder
1 tsp (2.5g) - Garlic Powder
1 tsp (2.5g) - Celery Salt
Plain Mayonnaise -
200ml (200g) - Olive Oil (NOT Extra Virgin Olive Oil)
1 - Large Whole Egg
1 1/2 tsp (15ml) - White Vinegar or Lemon Juice
1 tsp (10g) - Dijon Mustard
Tangy Southern Ingredients -
1 tsp (2.5g) - Smoked Paprika
1 tsp (2.5g) - Garlic Powder
1 Tbsp (20g) - Tomato Ketchup
1 Tbsp (20g) - Horseradish
1 Tbsp (20ml) - Worcestershire Sauce
Sea Salt Flakes To Taste
Additional Ingredients -
Burger Buns (I Used Brioche)
Tomato, Thinly Sliced
Lettuce (I Used Baby Cos), Washed
Pickles -
Seasoning To Taste
Notes -
Can I Use Chicken Breast?
You can definitely use chicken breast instead of thighs. The chicken breast will need to be butterflied and sliced into two even-sized fillets. As for cooking times, fry the breast for 3 minutes on each side at the same temperature of 170.c-340.f.
Mayonnaise By Hand -
To make the mayonnaise by hand, secure a bowl with a damp tea towel wrapped around the bottom. Add in all of the ingredients except the oil and whisk together until smooth. Whilst continuously and vigorously whisking, very slowly pour in the oil to create the emulsion. If it starts to pool on top, stop immediately and whisk it in before adding more. This can also be made in a blender or food processor.
How Long Will The Mayo Last?
The mayonnaise will last up to 2 days in the fridge but I can guarantee it will be gone in one sitting, its so good!

Just because it has no meat, it doesn't mean it has no punch. Try it out!! This burger is a really soft, easy to eat and packed full of the good things.
Its a full on tall, broad proppa burger. Serve it up with a pile of chips, chuck in a side salad and you are well away.

Smash Burger! ????
Tonight is all about the Smash Burger! ????
We are rocking with some 85/15 ground beef
Divide it into 4 equal balls and throw in the fridge to keep cold while we make our sauce!
Sauce:
1/3 cup lite mayo
2 Tbs Dijon mustard
1-2 Tbs hot sauce
1 Tbs pickle relish with some of that juice
1/4 cup of a grated yellow onion
Throw those beef balls on a cast iron over medium high heat and give them a smash, season with salt and pepper.
After 2-3 minutes give them a flip and add a slice of cheddar cheese, once cooked stack together and remove from the heat!
Using a toasted bun, add your patty’s, lettuce, onion, tomato and that sauce!
Now enjoy!!! ????
