How To make Kettle Roast
5 lb Rump roast
1/4 c Bacon drippings
1 x *or:
1/4 c Shortening
1 x Ginger
1 x Salt & pepper
2 ea Bay leaf
5 ea Cloves, whole
1 ea Sm Onion
1 c Water
Have roast tied so as to hold shape. Melt shortening in heavy iron skillet. Season the meat with the ginger, salt and pepper, and sear well on all sides. Add the bay leaves, cloves, onion and water, cover tightly, and let simmer about 4-1/2 hours. Source: Pennsylvania Dutch Cook Book - Fine Old Recipes, Culinary Arts Press, 1936.

Few tips for perfect crackling
* Always use lump charcoal. It gives better flavor and higher temps.
* Make sure the fat side is as dry as possible before you salt it.
* Apply the salt at least a few hours before cooking.
* You can even repeat the drying then salting process a few times for better results.
* Apply some high heat for a short time to the fat side either at the start or end of the cook.
* Don't rest the pork. It doesn't need it. The sooner you serve it the better.

What You’ll Need
1.5 Kg beef blade roast
For the Marinade
½ finely chopped red onion
2 large finely chopped cloves garlic
1 tsp mild mustard
½ cup Worcestershire sauce 1/3 cup
½ cup tomato sauce
½ cup water
1 cup red wine vinegar
1 + 2 tblsp extra virgin olive oil
What To Do
1. Add 1 tblsp olive oil, the onion and garlic to a pan and stir over medium heat for 1 minute.
2. Add the water, Worcestershire sauce, red wine vinegar, mustard and tomato sauce. Stir over medium heat for 1 minute or until well mixed. Allow to cool.
3. Place the beef in a plastic bag, pour over the marinade, seal and refrigerate for 12 to 24 hours. Turn over frequently.
4. Remove from the refrigerator and allow to reach room temperature whilst still immersed in marinade.
5. Remove the meat from the bag and pat dry.
6. Add 2 tblsp oil to a pan over high heat. Sear the meat on all sides.
7. Place the meat into the lit Weber Kettle at 180C -200C. Cook for a further 2 to 2 ½ hours until.
8. When cooked remove from the Weber, cover with foil and allow to rest for 15 minutes.
9. Finely slice and serve.

Smoked Chuck Roast On The Weber Kettle
I picked up a 5 pound boneless Chuck Roast and decided to make a day of it smoking the beautiful piece of beef on the Weber Kettle using some hickory wood for flavor. This a favorite cut of beef to use, as it really behaves like 'Brisket's Little Cousin' and tastes amazing when paired with a good rub and a slow cook.
**NOTE: At one point in the video I mention that I'm adding 1/4 cup of Apple Cider Vinegar to the foiled chuck roast. Just forget the 'vinegar' part. It was plain old Apple Cider :)

How to Cook a Beef Top Round Roast on the Weber Kettle
In this BBQ video, I cook a beef top round roast on my Weber Kettle charcoal grill. I seasoned the 4.75 lb beef roast with Kosher salt and Johnny's Seasoned Pepper. Then I cooked it on a 350 degree F grill, until the internal temperature of the meat reached 130 degrees F, and seared it at the end. The cooking time was 1 hour and 35 minutes.
