How To make Mini Mixed Berry Pie For One
1/4 cup Blueberries

1/4 cup Raspberries :

1/4 cup Strawberries -- halved*
1/4 cup Granulated Sweetener
1 teaspoon Granulated Sweetener
2 teaspoons Cornstarch
2 teaspoons -Water
2 Graham Cracker Sq. crushed
2 teaspoons Diet Stick Margarine :
melted
Preheat oven to 350`F. combine blueberries, raspberries and strawberries in a small bowl. Combine 1/4 cup granulated sweetener, cornstarch and water; add to berries and mix well. Place in 6-oz custard cup. Combine graham cracker crumbs with margarine and 1 teaspoon granulated sweetener. Sprinkle on top of berry mixture. Place mini-pie on baking sheet and bake at 350` for 25 to 30 minutes or until filling is bubbling. Serve warm. MICROWAVE DIRECTIONS: Combine berries in a 2-cup glass measuring cup. Combine 1/4 cup sweetener, cornstarch and water; add to berries and mix well. Cover with microwavable plastic wrap; vent one corner. Cook at high for 1/12 minutes or until mixture is thickened; stir once. Pour into a 6-ounce custard cup. Combine graham cracker crumbs with margarine and 1 teaspoon granulated sweetener. *Use fresh or frozen unsweetened berries.

♦️ Ingredients
FOR THE CRUST
2½ tablespoons salted butter , softened
2 tablespoons sugar
¼ cup all-purpose flour
1 tablespoon cornstarch
⅛ teaspoon kosher salt
BLUEBERRY FILLING
12 ounces blueberries (about 1 pint of blueberries)
4 tablespoons sugar
4 tablespoons all-purpose flour
½ teaspoon lemon zest
1 tablespoon lemon juice
♦️ Instructions
HOW TO MAKE THE SHORTBREAD COOKIE CRUST
1) Preheat the oven to 350° F.
2) Using a hand mixer, mix together the butter and sugar in a medium-sized bowl until well blended. Add the flour, cornstarch, and salt and mix until combined.
3) Press the dough firmly into a lightly buttered 5-inch baking dish using your fingertips or the back of a spoon.
4) Bake 18-20 minutes, until lightly golden. Remove from the oven and set aside to cool, about 20 minutes.
HOW TO MAKE THE FILLING AND BAKE
1) In a small bowl, toss the blueberries with sugar, flour, lemon zest, and lemon juice. After the ingredients are well combined, pour them over the cooled cookie crust.
2) Place the baking dish on a baking sheet and bake for 45 to 50 minutes.
3 ) Remove the pie from the oven to cool, 2 to 3 hours.

Triple Berry Pie | Razzleberry Pie for Two |Small Batch Pie
Razzleberry pie or Triple Berry pie uses a combination of raspberries, blueberries and blackberries between two layers of flaky pie crust.

Ingredients:
2 Pie crusts. For homemade pie crust use this recipe:
1 cup raspberries
1 cup blueberries
1 cup blackberries
1/4 cup plus 2 Tbsp sugar
pinch of salt
1/2 tsp of lemon juice
2 Tbsp cornstarch
1/2 egg
Preheat oven to 400 degrees F.
On a lightly floured surface roll out pie crust.
Use a 5 inch pie tin and place face down and cut out pie crust about 3/4 of an inch from the edge of pie crust. Repeat 3 more times for a total of 4 pie crusts.
Place two of pie crust into pie tins and allow edges of pie crust to hang .
over.
In a bowl, combine berries, sugar, salt, lemon juice and cornstarch. Stir to combine.
Place in a saucepan and heat over medium heat until filling bubbles and thickens.
Place in refrigerator to cool or let sit at room temperature.
Place cooled berry mixture into the pie tins.
Put remaining pie crusts over the top of the berries and crimp the edges together,. Use your fingers to flute the edges (see video)
Place pies on a baking sheet.
Brush beaten egg over the top and edges of the pie for a nice golden pie crust.
Bake for 20-25 minutes or until golden brown and pie filling is bubbly.
