The EASIEST Apple Cake Recipe! | Retro Swedish Apple Cake | Kaneläppelkaka
If you're looking for an ALL BUTTER cake that focusses on the APPLES - this retro Swedish recipe is THE ONE!
Sorry for all the caps lock going on here, but I am so excited to share this recipe with you. This simple apple cinnamon cake is soft, fluffy and not too sweet, making it the perfect pairing with a coffee or tea on a cool autumn evening.
Or any time of the year! (Heck, I usually eat cake around 3 p.m. so ...)
This cake can be made in under thirty minutes, and takes just over that in the oven, so let's GET BAKING!
* Recipe makes one 10-inch cake.
INGREDIENTS:
¼ cup fine bread crumbs
4 eggs
1 ¼ cups sugar
½ lb butter, melted
1 ½ cups sifted flour
1 tsp baking powder
3 apples, peeled, cored and cut into wedges
2 tsp ground cinnamon
METHOD:
Sprinkle a buttered cake pan or cast-iron skillet with the bread crumbs. Beat the eggs with 1 cup of the sugar until the mixture is thick and pale. Add the melted butter and the flour – sifted with the baking powder – and blend well.
Pour this batter into the cake pan or skillet. Dip the apples in the remaining sugar mixed with the cinnamon. Put the apples into the cake batter.
Make in a preheated 350F oven for 30 to 35 minutes (mine took 45), or until the top is golden and an inserted tester comes out clean (or at at least 206F). Serve the cake hot or at room temperature.

How to make a Swedish apple pie!
In this video my daughter and I will show you how to make a Swedish apple pie!

Here is the recipe:
Ingredients
150g butter
200 ml (170g) sugar
50 ml (60g) golden syrup (Lyle's Golden syrup:
50 ml (45g) heavy cream
300 ml (100g) oats
150 ml (95g) flour
1/2 tsp baking powder
1 tsp coarse sea salt
600g red apples
Step one:
Switch on the oven to 400 degrees Fahrenheit/200 degrees celsius and grease the pie dish with butter.
Step two:
Wash, peel and cut the apples into pieces. Lay the pieces evenly in the pie dish.
Step three:
Mix oats, flour, baking powder and salt in a bowl.
Step four:
Melt butter, sugar, golden syrup and cream in a pot on a low heat. Keep stirring and make sure it doesn't burn. Once the butter has melted remove from heat.
Step five:
Add the flour mixture into the pot and stir well.
Step six:
Pour mixture over apples. Make sure it's even on top of the apples.
Step seven:
Pop the pie in the oven at 400 degrees Fahrenheit for 30 minutes.
Step eight:
Add vanilla ice cream to the pie! Enjoy!

Swedish Apple Pie that makes its own crust

Ingredients:
Sliced apples, sliced but not too thin, peeled but you don’t have to be super meticulous about it (usually takes 4-7 apples, depending on the size of the apples - I start by slicing 4 apples, then slice more if needed)
About 1-2 Tablespoons of cinnamon sugar
6 ounces (1½ sticks) melted butter OR 12 Tblsp.
1 cup sugar
1 cup flour (all purpose flour)
1 beaten egg
Instructions
Fill a pie plate or any 8 or 9 inch casserole dish/pan with sliced apples. Only the center can be slightly above level with the top of dish or the topping will spill over the sides, so don’t get carried away. Sprinkle the apples with ~ 1 or 2 tablespoons cinnamon sugar.
Mix together the butter, sugar, flour and egg. Pour evenly over apples, sprinkle with more cinnamon sugar if desired.
Bake at 350 degrees F until deep golden brown - around 40-45 minutes or so.

Swedish Apple Pie - Crispy apple pie
This is really one of the best apple pies you ever will try! Really easy yo bake and the pie crust is crispy with a flavor of toffiee!

Crispy Apple Pie, 6 servings
4-5 apples
2 teaspoons cinnamon
2 tablespoons powdered sugar
Crispy pie crust:
150 g butter
135g caster sugar
70g golden syrup
50g heavy cream
105g rolled oats
90g all purposer flour
0.5 teaspoon baking powder
0.5 teaspoon salt
How to:
1. Set the oven to 175 degrees Celsius or 350 Fahrenheit
2. Peel, core and slice the apples, mix with sugar and cinnamon and place in a pie plate - about 25 cm in diameter or 10 inch.
3. Melt the butter in a frying pan or saucepan together with powdered sugar, syrup and cream.
4. Mix down oatmeal and flour mixed with baking powder and salt and stir to a smooth batter. Remove from heat.
5. Spread the batter over the apples in the pie plate.
6. Bake in the lower part of the oven for about 35-40 minutes, until the pie is golden brown. Allow to cool slightly before serving.
7. Serve with vanilla ice cream.

Autumn in Sweden means apple season! Here’s our recipe for Swedish apple crumble pie (‘smulpaj’).
Preheat oven to 225°C. Grease a pie pan.
Ingredients:
4 apples
130 g plain flour
50 g rolled oats
100 g butter (room temperature)
2 tbsp white sugar
Ground cinnamon
Remove the cores of the apples, then slice the apples. Put the slices in the pan and sprinkle with ground cinnamon and sugar.
Mix flour, oats, sugar. Add butter and mix to crumbly mass, using your fingers. Crumble the dough on top of the apple slices.
Bake in the oven for 15-20 minutes.
Serve with vanilla sauce or ice cream. Enjoy!
