Andrés Galindo of Nene’s Deli Taqueria in Brooklyn, NYC is in the MUNCHIES Test Kitchen making Quesabirria Tacos. He braises beef until tender in a rich chile broth and then crisps it in a corn tortilla with cheese. The result is a savory and cheesy cross between a quesadilla and a taco, served with a bright consommé dip.

Mexicans munch fried insects during week long festival
It is a fried scorpion, but apparently delicious and full of protein.
There are many more, lest you don’t have trypophobia.

A scorpion and two spiders. The scorpion is quite crunchy, and the spiders are so a little bit, more like mastic.
Have it together with a slice of cucumber, the taste will get elated.
And the maggots, they get packed into tacos, which become luxurious staple food.

First of all what we do with the spiders is to bake them, then we prepare them in taco with a garnish, also with Chilean cherries, onions, butter and white wine.
On March 27 in Mexico City, no fear is felt, as packs of gourmets savor the exotic food at the Fried Insects Festival.
They are such an inherent part of the Mexican gastronomy, that no one misses the week-long opportunity to have his try.

Here in Mexico, it has pre-Hispanic roots and its consumption dates back many years ago before the conquest. You can consume much protein from this food against the taboos.
More than 2,000 types of insects have been found in Mexico, with 250 consumed as food
