Cheesecake Autumn pleasure cottage cheese and pumpkin
Ingredients:
500 g soft cheese or cream cheese
600 g pumpkin puree (500 g for dough and 100 g for glaze)
100 g sugar for cottage cheese on dough
70 g of sugar for pumpkin dough (to taste, you can not sweeten)
20 g sugar for glaze (to taste)
2 eggs for the cheese on the dough
2 eggs for the pumpkin batter
1 egg for glaze
2 tablespoons of corn starch to the cheese on the dough
2 tablespoons cornstarch for pumpkin dough
30-40 g of poppy seeds (optional, I love Mac, so always use in this recipe))
1-2 teaspoons grated orange peel
100 g sour cream for glaze.
How to cook pumpkin and cottage cheese dessert:
Wash pumpkin, peel from seeds, fibers and peel, cut into pieces, bake in the oven at 150-180 degrees for 20-30 minutes (until soft), cook mashed potatoes using a blender.
Pour the poppy seeds with very hot water and let it brew for a quarter of an hour, drain the water.
Combine cottage cheese in a blender with 2 eggs and 100 g of sugar until soft, smooth, add 2 tablespoons of starch, poppy seeds and mix well again.
500 g pumpkin puree, 2 eggs, sugar (to taste), mix with a whisk until smooth. Then add 1-2 teaspoons of grated orange zest, 2 tablespoons of starch, mix.
The consistency of pumpkin and cottage cheese dough should be the same. If necessary, add corn starch or flour.
Spread a baking dish (22-24 cm) with oil and sprinkle with breadcrumbs or flour. Put a lot of dessert for pumpkin and cottage cheese in the form of alternating tablespoon.
If you lay out a tablespoon of dough alternately of pumpkin and cottage cheese, you get an unusual, bright and beautiful dessert
When all the dough is used up, slightly shake the mold or tap on the work surface to distribute the weight for the pumpkin dessert evenly.
Bake at 190 ° C in a preheated oven for about 60 minutes.
Prepare icing for pumpkin dessert: beat 100 g of pumpkin puree with 100 g of sour cream, sugar (to taste), 1 egg with a whisk or fork until smooth and smooth.
Remove the mold from the oven, check with a toothpick to make a dessert. If the toothpick does not stick to the dough, pour the mixture on the glaze on top and bake for another 10-15 minutes.
After the form is completely cool, and then remove the dessert from the pumpkin, revealing a removable side.

¼ cup maple syrup
1⅓ cups heavy cream (6 oz / 170g), at room temperature
⅔ cup whole milk
1 vanilla bean, split lengthwise and seeds scraped
6 large eggs yolks, at room temperature
¼ cup demerara sugar
¾ cup unsweetened pumpkin puree, from 1 roasted sugar pumpkin
1 teaspoon ground cinnamon
½ teaspoon Diamond Crystal kosher salt
Pinch each ground nutmeg and ground cloves
Granulated sugar, for caramelizing
