How To make ARMADILLO EGGS
Ingredients
2
pound
monterey jack cheese
2
pound
sharp cheddar cheese
2
pound
hot pork sausage
1/2
cup
bisquick mix
1
each
egg
1
pk
pork flavor shake 'n bake
20
each
whole jalapeno peppers
Directions:
Slice peppers in half lengthwise and scrape out all the seeds (wear gloves). Try to keep both halves near each other as you have to put them back together later.
Mix bisquick, raw sausage & cheddar cheese. Stuff each pepper with Monterey Jack cheese and put the halves back together. Grab a handful of bisquick mixture and mold around pepper in shape of elongated egg. Use enough to cover pepper well.
Dip armadillo egg in beaten egg and roll in Shake 'n Bake. Bake on broiler pan (can use cookie sheet) at 350 degrees for 25 minutes or until crisp.

Things you need for smoked armadillo eggs:
-Jalapenos
-Pork sausage of your choice
-Cream cheese
-Shredded cheese of your choice
-Bacon
-Sweet rub (SuckleBusters Honey BBQ)
-Sweet BBQ Sauce (SuckleBusters Honey BBQ)

How to prep:
-Cut stem off of jalapenos and remove insides
-Mix together cream cheese and shredded cheese
-Stuff cream cheese and cheese mixture into jalapenos
-Wrap sausage around jalapenos being sure to seal the jalapenos entirely
-Season with sweet rub
-Wrap bacon around the sausage
-Season with sweet rub again

How to cook:
-Smoke at 250F until internal temp of 165F and bacon is done
-Glaze with sweet rub, and let the sauce set for 10-15 minutes
-Let rest 10 minutes, slice and ENJOY!

HOW TO ARMADILLO EGGS ON THE BBQ

WHAT YOU WILL NEED:
- 2 lbs sausage
- 1 cup cheddar cheese
- 1 block of cream cheese
- 6 Jalapenos
- BBQ Rub of your choice
- BBQ Sauce of your choice
**PROTIP : With your leftover filling, you can melt it down for a chip dip.**
STEP #1
To prepare our Armadillo Eggs, cut the stem off your jalapenos and remove the seeds from the inside.
SETP #2
Mix together your filling by combining your cream cheese, cheddar cheese and BBQ rub together well. Once mixed begin to fill the jalapenos with the filling making sure to burp the air pockets out as you fill it so that you can get as much in as possible.
STEP #3
Next, take your sausage meat and begin to cover the outside of the jalapeno completely. Once it has been fully covered apply your favourite BBQ rub to the outside for added flavour.
STEP #4
Set up your grill for cooking indirect at around 275F. Once up to temperature, place the armadillo eggs on the grill opposite the coals and add in your favourite hardwood for smoking. Cook until the internal temperature reaches around 150F then sauce. Continue cooking until your armadillo eggs are around 165. We cooked ours to 163 then let it rest up to around 165F.
Slice and enjoy.
