How To make All American Cherry Pie
4 cups Fresh tart cherries
1 1/3 cups Sugar
2 tablespoons Plus 2 teaspoons
- quick-cooking tapioca 2 tablespoons Kirsch -- optional
Pastry for 9" double-crust - pie shell -- unbaked 2 tablespoons Butter
450 degrees. Sort, rinse, stem and pit cherries. Mix cherries, sugar, tapioca and kirsch in large bowl; let stand for 1 minutes.2. Pour fruit into unbaked pie shell and dot with butter. Cover with top crust (slashed to allow steam to escape) or lattice pastry. Bake 10 minutes at 450 degrees. Then reduce oven temperature to 350 degrees and continue baking until golden brown, about 40 more minutes. Water packed pitted tart red cherries32 Ounce (2 Cans Of 16 Ounce Each)

Directions
GETTING READY
1. Buy a readymade pie crust or make a pie crust pastry for 2 crust pie in a 9-inch glass pie plate.
2. Drain cherries from the can but save 1/2 cup liquid for later
MAKING
3. Use a 4 cup glass measure with which to measure out and blend sugar, flour and salt.
4. Add the cherry liquid to the glass measure and mix until smooth. Microwave this mixture on HIGH for 2-3 minutes while stirring the mixture twice till it is thick and smooth.
5. Add all purposes flour, butter and salt mix with you hand nd make a hard dough
6. Tip this mixture into the pastry shell and then dot with butter.
7. Roll out the remaining pastry crust to form a flat plate that is 1-inch larger than pie plate. Make slashes in center and then moisten edges of bottom crust with water and stick them together. Flute the edges of the pastry and place in a microwave oven
8. Brush top with water and sprinkle with sugar and cinnamon and microwave on HIGH for 7-9 minutes, rotating 1/4 turn halfway through cooking.
SERVING
9. Serve cold
TIP
Preheat the oven to 450° if using a conventional oven. Bake conventionally 10-15 minutes, or until top crust is golden brown.

For dough recipe:
2 cups of all purpose flour
3 sticks of butter (cut into small cubes)
1/3 cup of ice cold water
1/2 tsp of salt
pulse flour and salt together in a food processor until mixed.
add in butter and pulse until you get pea sized chunks
slowly add in the ice water until dough forms a ball.
take dough out of food processor and transfer to plastic wrap.
put in refridgerator for 1 hour or overnight
For cherry filling:
3 cups pitted fresh cherries
3/4 cup of granulated sugar
1 tbs of butter
3 tbsp of cornstarch
1/8 tsp of salt
1/2 juice of lemon
1 tsp vanilla extract
combine cherries with granulated sugar, cornstarch, salt, lemon juice, and vanilla extract and mix thoroughly. Let sit for 10-15 minutes.
remove dough from freezer and roll out until 1/4 inch thick. take dough and line pie pan or muffin pan.
scoop cherries mix to fill.
cover top of pie with remaining dough.
bake at 400 for 35 - 40 minutes, until cherries filling bubbles and crust is golden brown.
remove from oven and let sit for 15-30 minutes until cool.
serves 6-8

I acquired the Cherries in Door County a little bit out of Sister Bay, Wisconsin at a place called Seaquist Orchards. I love the cherries from here and the drive along Wisconsin's Peninsula is absolutely beautiful!
I know this isn't the perfect Pie Recipe out there but it is a VERY easy pie recipe! If you are a beginner and want a Pie beginner recipe then you'll love this. Mostly because of the Mrs. Anderson’s Baking Harold Import Co 11 Crust Maker Bag. It makes rolling the crust out almost dummy proof. (As you can see I still messed it up so be careful haha)
