How To make Almond Crumb Chicken
1 oz Blanched almonds; ground
1 tb Bread crumbs; plain, dried
1 1/2 ts Parmesan cheese; grated
1/8 ts Salt
1/8 ts Basil leaves
8 oz Chicken cutlets; divided 1/2
1 tb Skim milk
1 tb Vegetable oil
2 Lemon wedges
Pound chicken cutlet to 1/8 inch thickness. On sheet of wax paper combine ground almonds, bread crumbs, cheese, salt and basil. Dip 1 chicken cutlet into milk, then into crumb mixture, coating both sides evenly; repeat procedure with remaining cutlet, being sure to use all of milk and crumb mixture. Heat oil in skillet. Add chicken and coat, turning once, until browned on both sides, 3 to 4 minutes on each side. Serve with lemon wedges. Per serving (each cutlet): 289 cal.; 16 g. fat; 67 mg. cholesterol. WW: 3 Pro; 1 1/2 fat; 110 cal.

Simple and super easy! I made it as a light lunch and it was very successful! I do like chicken tenders, they’re small portions and a very soft meat. Great for kids! Crumbing with almond meal was a great way to introduce a different method and one that I truly loved.
Almond meal is rich in vitamin E and other antioxidants which helps reduce the risk of serious health conditions such as heart disease, strokes, diabetes and cancer.
In no time you’ll have lunch ready for the family!

RECIPE
Serves 4
Olive oil for shallow frying
12 chicken tenderloins
1/2 cup plain flour
Salt & pepper
2 eggs, lightly beaten
1 cup breadcrumbs
1 cup almond meal
I shallow dish add the plain flour, salt & pepper, and mix well. Set aside.
In another shallow dish add the breadcrumbs & almond meal and mix well, set aside.
Take the chicken tenders and coat them in the flour. Shake them and dip them in the egg and straight into the breadcrumbs. Press down to coat well.
Add 1cm coverage of olive oil in a deep frying pan. Bring to hot and add the chicken tenders. Fry for approx 1-2mins on each side or until cooked through and golden. Serve with green salad or in a bun.

Chicken Schnitzel it's really much like Fried Chicken Tenders but on a Chicken Full Size Breast, and simple than Keto KFC cause rather than 11 herbs and spices, we are only going to use and need 4 ingredients to make this Breaded Chicken Cutlet, yet all the flavour is there, you can only build on it!
Cannot take too much credit cause this recipe is by Lovely Assistant Robxn who as usual really did support me a lot in the making of this as I'm not amazing as meat-based challenges.
