How To make Almond Praline Bell
-Nancy Speicher DPXX20A 1 c Blanched almonds
1 1/3 c Granulated sugar
2/3 c Light-brown sugar; packed
1/3 c Honey
1/3 c -cold water
6 tb Butter
1 Lemon; cut in half
1. Preheat oven to 300F. Butter inside of 9", 10-cup decorative
mold; or use a 10-cup bowl. Grease a large cookie sheet. On another cookie sheet, toast almonds until golden brown - about 20 minutes. In blender or food processor, grind almonds (makes 1 1/2 cups). 2. In a heavy, 3-quart saucepan, combine granulated sugar, brown
sugar, honey and water. Cook, stirring with a wooden spoon, until sugar is dissolved. 3. Cook, uncovered and without stirring, to 300F on candy
thermometer, or until a few drops of syrup in cold water form hard, brittle threads. 4. Remove from heat; add butter and ground almonds.
5. Pour into prepared cookie sheet. Using the 2 lemon halves and
working quickly, smooth out and push from the center to the edge of the cookie sheet until the brittle is 1/8" thick. 6. Lift brittle off the sheet before it is completely cooled and
hardened, and mold it against the inside of prepared mold. 7. Cool completely - about 2 hours. Unmold just before it is to be
served. 8. To unmold: With spatula, carefully loosen candy from pan; remove.
Makes 1 large bell. Note: Leftover pieces can be kept in a closed jar at room temperature, or wrapped in aluminum foil. From McCalls Cookery No. 13

Pecan Candy/Pralines
Ingredients:
Pecans
Butter
Evaporated milk
Vanilla
Sugar
Directions:
1. In a pot melt 1 stick of butter.
2. Once the butter has melted, add 2 1/2 cups of sugar, 1 teaspoon of vanilla extract, and 12 oz of evaporated milk.
3. Stir continuously on a medium heat.
4. Once the mixture begins to thicken, add 1 cup of pecans. Continuously stir.
5. Remove from heat once the mixture is thick, smooth, and not runny.
6. Place spoon fulls on parchment paper.
7. Let cool for 1 hour.
8. Enjoy.

Pink praline tart Lyon specialty: fun and easy French dessert
Join my online French cooking classes ????????: Learn to make lyon city specialty, the pink praline tart at home with that recipe. pink pralines are sugar coated almonds and hazelnuts covered in pink sugar that has been caramelised. there are two version of the praline tart: one version is thick and the other as made in this video recipe is thin.
ingredients for a tart for 4 to 6 people:
150 grams of pink praline crushed in small bits or in powder (can be found online)
150 grams of crème fraîche or double cream ( heavy whipping cream)
250 grams of sweet shortcrust pastry

equipment: an 18cm diameter tart tin
important when you mix the praline to the cream, make sure the cream boils first then add the praline. once mixed together cook the pralines in the cream until the temperature reaches 113 degrees celsius. then turn the heat off and leave to rest for a few minutes before pouring over the the tart base

INGREDIENTS????????????
????????Meringue Mixture
- 4 Egg Whites
- 1/3 cup White Sugar
????????Coffee Egg Yolk Mixture
- 1/4 cup Hot Water
- 1 tablespoon Instant Coffee Powder
- 4 Egg Yolks
- 1/4 cup Vegetable Oil or Olive Oil
????????Batter Mixture
- 1 cup Cake Flour
- 1/2 cup White Sugar
- 1 tablespoon Baking Powder
