Ingredients:
8-10 roma tomatoes, sliced 1/2 inch thick
1 small onion. sliced 1/2 inch or less thick
salt & pepper to taste
2 Tbsp olive oil
1 Tbsp parsley, chopped
basil, optional
red pepper flakes, optional and to taste
4 oz garlic & herb goat cheese
1/2 cup parmesan cheese
1 cup shredded mozzarella cheese
1 package crescent roll dough
Directions:
Preheat oven to 375 degrees. Spray sheet pan with non-stick cooking spray. Set aside.
In a medium bowl, add sliced tomatoes, sliced onion, salt, pepper, olive oil, parsley, and basil if using. Combine well so all ingredients are distributed evenly.
Spread crescent roll dough in sprayed pan. Shingle tomatoes and onions in rows across and down on the dough until all of the dough is covered. Sprinkle with parmesan cheese, drop goat cheese in bits on top of tomatoes, and sprinkle with the mozzarella cheese on top.
Bake 20 - 25 minutes until dough is done and cheese has started to slightly brown. Let cool. Cut into squares and serve.

This is the easiest tart ever! Tart Flambee is a speciality of the region of Alsace, France. Super simple and super delicious! In the original recipe there is no added cheese, but I like the taste of melted Emmental on top. ???? The original is made with unleavened dough, but I like to add some baking powder in, for the better texture. I hope you will enjoy my version of this classics! ????
