1 Can(20 oz)chunk pineapple in
-juice 1/2 lb Polish sausage
Vegetable oil 2 lg Cloves garlic, quartered
1 lg Yellow onion, sliced
2 c Thinly sliced carrots
2 tb Minced
Twice cooked pork belly-- a real Sichuan style pork stir fry
Twice cooked pork (sometimes also referred to as double-cooked pork belly ) is a dish from Sichuan cuisine that is very popular in China. It is made with pork belly that is first cooked in water until almost cooked, then for the second stir-frying process, the slices are fried with garlic sprouts, green peppers, and some of the most important Sichuan seasonings. Since it is slightly salty so should be served with plain rice and noodles.

Chili Oil Recipe:
2 cups avocado oil (or another neutral oil)
5 cloves of thinly sliced garlic (cook for 3 minutes)
2 large or 4 medium shallots (cook for 7 minutes)
1 thumb-sized piece of ginger (cook for 1 minute 30 seconds)
4 spring onions
2-star anise
1 stick cinnamon
2 tsp cloves
1 tbsp Szechuan peppercorns
1/2 cup Chinese chili flakes (you can use regular chili flakes)
1 tbsp chili powder (if you want it more spicy)
1/4 cup toasted sesame seeds
2 tsp kosher salt
2 tsp white pepper
2 tsp MSG (optional)
1 tbsp Chinese black vinegar
1 tbsp soy sauce (optional)
Chili oil quick version:
1 cup neutral oil (I used avocado)
3 tbsp chili flakes
4 cloves of minced garlic
1/2 tsp kosher salt
1/2 tsp pepper
add any of the extra items from above (optional)

Chinese Chicken stock recipe:
1 Chicken carcass
3.5L water
2 tbsp chicken powder
1 tbsp msg
1/2 tbsp sugar
1 tbsp salt
1 tbsp white peppercorn
1 large onion
1 carrot
2 x dried squid (my secret ingredient)
2 slices ginger
Method:
1. Boil chicken bones for 10mins to remove scum
2. Wash bones under cold water
3. Boil fresh water and put cooked bones back in with ginger, carrot, onion and white pepper for 2 hours
4. Season soup with remaining ingredients and use it for all your chinese cooking!
