This salad is super simple and takes only a few minutes to prepare. It's refreshing, crunchy and very tasty! If one of your goals this year is to lose some weight and eat healthier this salad could be one of your new favorites. It's delicious and very healthy! Hope you'll like this easy recipe too!

Avocado Shrimp Salad Cups
Grilled Chicken Caesar Salad
BETH’S SHRIMP WITH AVOCADO AND MANGO SALAD
Serves 4
INGREDIENTS:
2 lbs (900g) shrimp, peeled deveined, tails removed
1 tbsp (15ml) olive oil
Salt and pepper to taste
FOR DRESSING:
Zest of 1 lime
½ cup (120ml) lime juice
¼ cup (60ml) soy sauce
2 tsp (10ml) brown sugar
2 tsp (10ml) rice wine vinegar
2 tsp (10ml) fresh ginger, grated
3 cloves garlic, minced
¼ tsp (1.25ml) red pepper flakes
2 tbsp (30ml) grapeseed oil
4 tsp (20ml) toasted sesame oil
FOR SALAD:
10 Napa cabbage leaves, julienned
1 cup cabbage, julienned
¼ cup (60ml) mint, julienned
½ red bell pepper, sliced
1 cup (150g) mango, diced
1 cup (150g) peanuts, dry roasted unsalted
1 avocado, sliced
METHOD:
Preheat oven to 350F(175C). Score shrimp backs. Toss with olive oil, salt and pepper. Bake for 6-8 minutes until cooked through. Allow to cool and set aside. Refrigerate if not using within 30 mins.
Mix dressing ingredients until combined, whisk in oils and set aside.
Place all salad ingredients (except avocado) with shrimp in a large bowl. Add half the dressing, toss to coat. Transfer to large platter, add avocado slices, and freshly torn mint as garnish. Serve remaining dressing on the side.

serves 4 as a main course, 8 as a starter
(makes about 15 fritters)
3 eggs - beaten
1 t. kosher salt
fresh ground pepper, to taste
3 ears corn, shucked and kernels cut from cob (about 3 cups)
1/2 c. red pepper - diced
1/2 c. green onion - white and green parts chopped
1/2 c. cilantro - chopped
1/2 c. + 1/8 c. flour
grape seed or canola oil
2 avocados - halved, pit removed, but flesh left in skin
1 lime - quartered
kosher salt
fresh ground pepper
chopped cilantro
a couple dashes Cholula hot sauce (optional)
In a large bowl, combine beaten eggs, salt and pepper. Whisk to combine. Add the corn, red pepper, green onion, and cilantro to the egg mixture. Stir until combined. Add flour, stirring until all flour is incorporated into the egg and veggie mixture.
Heat enough oil to coat the bottom of a heavy skillet over medium heat. When hot, add heaping tablespoons of corn batter to the skillet, being careful not to crowd them in the pan (you will need to do more than one batch). Cook fritters approximately 3 minutes per side or until golden brown and crisp. Remove and drain on a sheet pan lined with paper towels. Wipe skillet clean, heat new oil and repeat with remaining batter. Depending on the size of your pan, it may take 1 or 2 more batches to finish batter.
For smashed avocados:
Take each avocado half and make crosshatch cuts across the flesh a paring knife (without cutting the skin.) Gently scrape the flesh from the skin with a fork and mix coarsely. (You are basically using the skin as a little bowl for the smashed up avocado :).
Top each avocado with a squeeze of lime, a little salt & pepper, a sprinkle of chopped cilantro and some Cholula. Serve along side cilantro-corn fritters or spoon some on top!
