Well I’m only human and don’t get everything right, I think it’s important to show the failures as well as the wins. This is my favourite sweet pie so we will be back with an improved version ✌️

Recipe for Chocolate Pecan Pie
3 eggs lightly beaten
1 c Kari light syrup
1/2 c sugar
1/3 c semi sweet chocolate chips
2 T butter
1 t vanilla
1 1/2 c pecan halves
Put above ingredients into sauce pan until melted together then pour into unbaked 9 inch pie shell
350 degrees for 50-60 min
Cool on wire rack

For crust
2 cups graham cracker crumbs about 16 crackers
1 cup pecans, finely ground
¼ cup light brown sugar, packed
8 tablespoons unsalted butter, melted
For the filling
16 ounces cream cheese, softened
½ cup granulated sugar
½ cup sour cream, room temperature
1 tablespoon vanilla extract
¼ teaspoon salt
2 large eggs, room temperature, lightly beaten
For the topping
1 cup light brown sugar, packed
⅔ cup dark corn syrup
1 tablespoon bourbon (optional) sub vanilla
¼ cup unsalted butter
3 large eggs
¼ cup heavy cream
¼ teaspoon salt
2 and ½ cups coarsely chopped pecans
Make the crust
Heat the oven to 350°F. Line the inside bottom and sides of a 9-inch springform pan with parchment paper or aluminum foil and spray lightly with nonstick spray. Wrap fo
Stir the graham cracker crumbs, ground pecans, brown sugar, and melted butter together until it resembles wet sand. Press the crumb mixture into the bottom and up the sides of the prepared pan.
Make sure to push the crust up at least 3/4 of the way.
Bake the crust for 10 minutes.
Make the filling
Reduce the oven temperature to 300ºF.
mix bowl cream cheese with an electric mixer on medium to medium-high speed until smooth and creamy, about 1 minute. Make sure not to over mix.
Add the sugar, sour cream, vanilla, and salt. Beat on medium speed until well combined.
Gently stir in the eggs just until combined. Pour the batter into the prepared crust.
Bake for 40 minutes. Once the cheesecake goes into the oven, begin working on the topping.
Make the topping
Combine the brown sugar, corn syrup, rum, and butter in a medium saucepan. Cook until bubbly. Set aside and let cool for 2 minutes.
Whisked together eggs and cream. And then add in your syrup mixture.
After 40 minutes, remove your cheesecake and add your caramel topper.
Place your cheesecake back in the oven for another 50 minutes and bake till golden brown.
Cool completely and refrigerate for 4 hours before serving!
