Savoury Spinach and Bacon Cheesecake - Low Carb / LCHF
Savoury cheesecake? I’d never heard of such a thing! But since bacon makes almost anything delicious, I thought this recipe from lowcarbdietitian.com was worth a try. Package sizes in Australia never match the US, so I’ve had to adapt a bit. The feta, ricotta and spinach come in smaller package sizes here, and on top of that my springform pan is closer to 9” rather than 8”. So I knew it wouldn’t be as thick as the recipe author intended. But I still figured it would be delicious, and I was right. It’s not the same texture as sweet cheesecakes made with cream cheese, but it sure is tasty. Serve it warm or cold. Yum!
Ingredients
6 large eggs
8 oz (226 g) Feta Cheese
4 bacon strips
1 tsp salt (divided* - optional)
16 oz (453 g) whole milk ricotta cheese
12 oz (340g) frozen, chopped spinach, thawed
1 medium onion
Directions
Preheat oven to 375°F/180°C. Place ricotta cheese in a large bowl. Add 5 of the eggs. Crumble the feta cheese into the bowl. Add half of the salt. Mix with an electric mixer until smooth (there may still be some feta lumps, but that’s OK).
In a large skillet, fry the bacon until brown and crispy. Remove bacon to paper towel. Dice onion and place in skillet with fat from the bacon. Cook onion until light brown and completely soft. Cut the bacon into small pieces and add to the cooked onion.
Squeeze as much moisture out of the spinach as possible and add to the bacon and onion. Add remaining raw egg and 6 Tbsp of the ricotta-feta mixture. Mix ingredients until well combined.
Line the bottom and sides of an 8-inch springform pan with parchment or wax paper. Pour half of the ricotta-feta mixture into the springform pan. Gently spoon the spinach-bacon mixture over the ricotta-feta mixture. Pour the remaining ricotta-feta mixture into the pan.
Bake at 375 degrees Fahrenheit for about one hour, until golden brown but centre is still slightly jiggly. Let cool at least 1 hour before serving or refrigerating. Can be served warm or cold.

364 Calories, 27.9g Fat, 990mg Sodium, 7.6g Carbs, 1.2g Fibre (6.4 g net carb), 20.9g Protein
* The original recipe didn’t say what to do with the other half teaspoon of salt — I only used 1/2 tsp. But truthfully, feta cheese is salty enough, so you could omit the added salt entirely. I will next time.
