HOME COOKING SAMPLER:
2 tb Butter; softened
1 1/2 lb Fresh salmon; cooked and
-flaked to make about 3 cups 2 c Fresh bread crumbs; made frm
-2 sl quality white bread, -crusts removed 1 tb Scallion, white only; minced
1 tb Fresh dill; snipped
1/2 Lemon; zest of, grated
1 Egg
1 c Heavy cream
1/2 ts Salt
Black pepper Cayenne pepper GARNISH:
1/2 c Sour cream
Caviar Lemon wedges Preheat the oven to 350~. Thoroughly grease 6 individual ramekins or custard cups with 1 tbsp of the butter. Place the flaked salmon in a bowl. Add 3/4 cup of the bread crumbs, the scallion, dill, lemon zest, egg, and cream. Mix gently with a fork. Season with salt, pepper, and cayenne pepper. Divide the mixture among the buttered cups and pack it down slightly. Top the croquettes with the remaining 1/4 cup of bread crumbs. Dot with the remaining tbsp of butter. Arrange the cups in a roasting pan. Pour in enough hot water to come halfway up the sides of the ramekins. Bake until fairly firm and set, about 30 mins. Cool for 5 to 10 mins. The croquettes can be unmolded, right side up, or served in the ramekins. Top each croquette with sour cream and caviar, or simply garnish with lemon. Author - Peggy K. Glass -----

What You'll Need for the Poached Salmon:
2 lbs salmon, skinned and cut into 4 pieces (or 2 -- 14.75 oz. cans of canned salmon)
¼ c dry vermouth, white wine or lemon juice
Salt, to taste
What You'll Need for the Patties:
¼ cup panko or breadcrumbs
1 tsp dried parsley
2 tsp olive oil
1 tsp lemon zest
1 egg, beaten
1 shallot, minced
1 tsp dried dill
1 tsp paprika
1 tsp salt
Pepper, to taste
1 cup panko or bread crumbs for coating

1 lb salmon fresh
1/4 cup green bell peppers
1/4 cup red bell peppers
1/4 cup onion
2 tbsp green onions
1 tbsp garlic finely chopped
1/4 cup mayo or sub with greek yogurt, sour cream, or egg
4 drops of Worcestershire sauce
No-Salt Cajun Seasoning to taste (Cooking With Tammy brand)
Seafood seasoning to taste (Cooking With Tammy brand)
salt to taste
ground black pepper to taste
onion powder to taste
paprika to taste
Old Bay to taste
Italian bread crumbs for binding/coating
lemon wedges garnish
Saute bell peppers, onions, and garlic.
Reserve veggies until cool.
Cut the salmon into mini bite-size pieces, and add to a bowl.
Add the veggies to the salmon, and season the salmon with onion powder, paprika, Old Bay, no-salt Cajun Seasonings, black pepper, Worcestershire sauce, and salt if necessary.
Add mayo or binding substitute and combine.
Add just enough bread crumbs to the salmon mixture.
Chill for an hour to allow the mixture to set and slightly harden.
Mold the patties and lightly coat them with breadcrumbs.
Add oil to a skillet and fry until brown on each side.
Serve with your favorite side dish.
Creamy Dill Sauce
1/4 cup mayo
2 1/2 tbsp lemon juice
1 tbsp dill paste or fresh dill
pinch of salt
