How To make Banana Squares
TASTE OF HOME 4/5/94:
2 Eggs; separated
2/3 c Shortening
1 1/2 c Sugar
1 c Mashed ripe bananas (2 to 3
Medium) 1 1/2 c All-purpose flour
1 ts Baking soda
1/4 c Sour milk*
1/2 ts Vanilla extract
1/2 c Chopped walnuts, optional
Whipped cream and sliced Bananas; optional In a small mixing bowl, beat egg whites until soft peaks form; set aside. In a large mixing bowl, cream shortening and sugar. Beat in egg yolks; mix well. Add bananas. Combine flour and baking soda; add to creamed mixture alternately with milk, beating well after each addition. Add vanilla. Fold in egg whites. Fold in nuts if desired. Pour into a greased 13x9x2" baking pan. Bake at 350 degrees for 45-50 minutes. Cool on a wire rack. If desired, garnish with a dollop of whipped cream and a few banana slices. * = To sour milk, place 1 tsp. white vinegar in a measuring cup. 3 ripe bananas
2 cups (220g) quick oats, dry
6 tablespoon (120g) peanut butter, all-natural

Banana Bars
Don’t waste those overripe, black bananas! Put those bananas into this recipe for Banana Bars. Enjoy these bars topped with cream cheese frosting. You might also enjoy using your overripe bananas in banana muffins. Here’s the link for my Banana Nut Muffin video and recipe:

Bar Ingredients:
1 C granulated sugar
2 mashed bananas, overripe
1/3 C vegetable or canola oil
2 eggs
1 C flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. salt
Frosting Ingredients:
3 oz. cream cheese, softened
1/3 C buyer or margarine, softened
1 tsp. vanilla
2 C powdered sugar
Directions:
1. Preheat oven to 350°F.
3. Grease the bottom and sides of a 9 x 13 pan.
4. Mash the overripe banana with a fork.
5. In a large bowl mix granulated sugar, bananas, oil, and eggs with a spoon.
6. Spread the batter into the pan.
7. Bake the bars for 25 to 30 minutes or until a toothpick comes out clean when inserted in the center of the bars.
8. Allowed to completely cool. This will take approximately one hour.
9. In a medium bowl mix cream cheese, butter, powdered sugar and vanilla with an electric mixer.
10. Spread the frosting on the cool bars.
11. Store the bars in the refrigerator.

THE BARS
- 2 cups flour
- 2 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup butter, room temperature
- 2/3 cup sugar
- 2/3 cup brown sugar
- 1 teaspoon vanilla
- 1 cup mashed banana
- 1 egg
- 2 cups chocolate chips (I prefer the miniature variety for even distribution)
Cream together the butter and sugars until light and fluffy. Add vanilla, egg, and banana and beat to combine.
Add dry ingredients and mix until completely incorporated with no clumps of dry flour. Finally, fold in the chocolate chips.
Pour into a greased 10 x 15 baking pan and place in a preheated 350-degree oven for 30-40 minutes. A toothpick will come out clean when inserted into the middle of bars.
Let cool completely before icing.
THE FROSTING
- 8 ounces cream cheese, room temperature
- 1 stick butter, room temperature
- 1 teaspoon vanilla
- 2 cups powdered sugar
Beat cream cheese and butter until light and fluffy. Add vanilla and sifted powdered sugar. You may need to add more or less sugar to achieve the consistency you desire. Beat to completely combine and spread on cooled bars!
