How To make Barbecued Speckled Trout
1 sm Trout, whole
Flour Corn oil Salt & pepper; to taste Tabasco Wash the fish and dry with a paper towel. Make a paste fron the flour, corn oil seasoned with salt, pepper and tabasco. Coat the fish with the thin paste. Place over a grill over medium heat about three inches from the charcoal brickettes. Barbecue about six to eight minutes, turning the fish once. Allow one fish per person. Also for: Use flounder, blues, mackerel, snapper, bass, specks, mullet -----

Smoked Speckled Trout with Lemon Butter Sauce
RECIPE COURTESY OF MOE CASON
Ingredients:
2 lbs of speckled trout (filleted)
2 tbsps white onion, minced
1 stick unsalted butter (plus more for buttering pan)
2 tbsps lemon juice
3 tsps Moe Cason Beef Rub
1 tsp red pepper flakes
1 tbsp capers
salt & pepper, to taste
fresh parsley, if desired
Directions:
Lemon Butter Sauce
- Melt butter in saucepan over low-medium heat
- Whisk in lemon juice, minced onion, rub, red pepper flakes, and 1 tsp Moe Cason Beef Rub
- Let everything cook & reduce for few minutes
Speckled Trout
- Heat your smoker to 350F
- Butter a shallow baking pan.
- Lay fillets in a single layer in the buttered pan, sprinkle with remaining Moe Cason Beef Rub
- Pour half of sauce evenly over the raw fillets.
- Bake fillets in smoker for 12-16 minutes or until the fish is flaky.
- Pour remaining sauce over fillets, sprinkle with fresh parsley and enjoy immediately.
