Sicilian Spiedini Beef Braciole Recipe ( No Sauce)
This Sicilian beef braciole recipe is not the typical recipe of large braciole cooked in the tomato sauce, but a lighter version originated from the Strait of Sicily. These braciole are small bites of beef spiedini (braciolette), soft inside and crispy outside. They are filled with a stringy cheese and coated with breadcrumbs flavored with Parmesan, garlic, and basil. They are baked in the oven without tomato sauce.

Serving Sicilian braciole (0:00)

Hammer each slice and cut in stripes (0:41)
Season with salt and olive oil (0:56)
Prepare the breadcrumbs (1:09)
Roll the braciole (1:36)
Insert them in the screws (1:58)
Bake for 30 minutes (2:13)
Turn them and bake for 10 more minutes (2:20)
Transfer on a serving dish (2:30)
Sicilian Tripe Recipe: How to cook tripe the authentic Sicilian nonna style!
Don’t be afraid to cook tripe! It’s a very mild, yet incredibly delicious meat that is a good entry to Italian style snout to tail cooking. This Sicilian style is the way my family has been eating it for generations just like nonna used to make it.
Serves 4 people as an entree
Prep time: 5 minutes
Cook time: 1 hour
Ingredients:
500 grams (17 ounces) of beef tripe, cleaned and precooked
1 liter of water or chicken stock
300 grams (10 ounces) Yukon gold potato diced
Soffritto (1 carrot,1 celery stock, half an onion) pulsed in food processor
½ cup of white wine
1 tablespoon of tomato paste
Parsley and bay leaf to taste
Salt and pepper to taste
Over medium heat we’ll add the soffritto to a heavy bottom stock pot and let it sweat down for about 7 or 8 minutes before we add the garlic and the rest of the ingredients.
Once the soffritto is cooked through we’ll add the garlic. It only needs to cook for about 30 seconds so this is why we’re adding it now. Otherwise it would get bitter and really overpower the other flavors. Then we’re going to add the tomato paste. I like to saute it for a few seconds to add another depth of flavor. Only a few seconds so it doesn’t burn. Once you smell something faintly metallic like copper, then it’s done and we want to add some white wine.
Cook the wine down to a syrup almost and then we’ll cover it with water or the meat stock, bay leaf and parsley. Don’t salt it quite yet because it’s going to cook for a while. That avoids overseasoning it. Add the trip to the pot and we’ll let this cook for about 15 minutes. After 15 minutes we’ll add the potatoes. I didn’t add them right away because they’ll turn to mush in the hour that this cooks. Instead they’ll hold their shape and be nice and tender if they cook for about 40 minutes.

Buongiorno amici, spero stiate bene! Oggi vi propongo una ricetta tradizionale siciliana : gli arancini di riso al ragù e piselli, una delle ricette siciliane più famose al mondo e direi anche più deliziose.
‼️Consigli ‼️
✅️ usa metà riso Roma e metà Originario o Carnaroli
✅️ fai raffreddare completamente il riso prima di formare gli arancini
✅️ insaporisci bene il riso così sarà più goloso anche dove non vi è il ripieno
✅️ usa una provola anziché la mozzarella perché fa troppa acqua e rischia di far aprire l'arancino
✅️ friggi con metà olio extravergine d'oliva e metà di semi per un sapore più goloso
✅️ se vuoi congelare gli arancini, congelati da crudi dopo averli impanati

1 kg riso (metà Roma e metà Originario)
2 bustine di zafferano
2,200 g acqua
sale
olio extravergine d'oliva
800 g pomodoro
sedano,carota,cipolla
pepe nero
120 g parmigiano
80 g burro
150 g provola
500 g carne macinata bovino o metà suino e metà bovino
rosmarino
500 g pisellini
pangrattato quanto basta
2 uova
2 bicchieri di acqua
2 bicchieri di farina

Ingredients:
1 pack (500g) stew beef or veal
1 can diced tomaotoes
1 onion
4-5 garlic cloves
2-3 sweet bell peppers (any colour)
1 pack of mushrooms
4-5 white potaotes
1/2 can of water
2 tsp of garlic powder, and parsley flakes
salt and pepper to taste
