In this episode we use OEM GM Parts to bolt an OBS GM bench seat into our Squarebody dually and modify a van drive by wire throttle assembly to bolt to the firewall in the correct position. ½ tsp dry yeast
170 g beer water
180 g milk
Mix until just combined
Rest for 1 hour
Mix with dough hook for 1 min, rest for 1 hour
Mix with dough hook for 2 min, rest for 1 hour
Check with windowpane, once passed, move to fridge for overnight ferment
Pre - shaping, final proof for 2+- hour at 27C.
420F 9 -10 mins. Very puffy and the spikes looks cute!

Cheesy Bacon Pretzel Bombs

Ingredients
2 1/4 teaspoons active dry yeast (1 packet)
12 ounces warm beer
2 tablespoons granulated sugar
3 1/2 cups all-purpose flour + more for dusting counter
1 teaspoon kosher salt + more for pretzel tops
2 tablespoons baking soda
2 cups water
8 ounces Mexican cheese blend, shredded (or cheddar cheese)
1 (4 ounce) can diced jalapeños
12 ounces bacon, cooked and chopped into bite size pieces
Directions
Preheat oven to 450°.
Pour beer into the bowl of a stand mixer fitted with a dough hook (see cooks note if you do not have a stand mixer), sprinkle yeast over top, add sugar and stir. Allow yeast to bloom for 5-10 minutes. Once it is nice and foamy, it is ready. *It should look like the 'head' of a beer poured too quickly and smell yeasty.
Meanwhile in a medium mixing bowl combine cheeses, bacon and jalapeños. Mix together.
In a small bowl beat egg, set aside. Sprinkle clean counter top with ¼ cup flour. Line a baking sheet with parchment paper or spray with cooking spray. Set aside.
Add flour and salt to stand mixer. Knead for 3- 5 minutes until the dough comes together in one ball. Add more flour a tablespoon at a time as needed, if bread is too sticky to come together. Dough should be tacky when you pull it out of the mixer, not sticky.
Place dough on floured counter top and knead in flour until it is no longer tacky, just a minute or two. Form dough into a ball. We are going to cut this ball into 36 (somewhat) even pieces. First quarter the ball of dough. *I used a bench scraper, but a butter knife would work too. Roll each quarter into a fat log. Cut that into 3 pieces. Roll each piece into a log and cut into 3 pieces. When you are done you will have 36 pieces.
Fill a medium (4 cup) bowl with 2 cups of hot water and add baking soda. Place baking sheet, baking soda water and cheese mixture on the counter that you are working on.
Roll each dough piece (one at a time) into a ball and then flatten it into a circle. Add 1 tablespoon of cheese mixture in the center *I used a tablespoon scooper. Carefully pull each side over the cheese to create a ‘cheese package’, pinching the edges closed. Roll the dough into a ball. Be careful to make sure you can not see the cheese through the dough. Tap fingers in flour, pinch any tears and roll again. Set aside and repeat until you have 3 stuffed dough balls. Transfer 3 stuffed dough balls to hot water mixture and allow to set while you prepare the next 3. Prepare the next 3 dough balls. Remove dough balls from water with a slotted spoon and place on prepared baking sheet. Place 3 newly prepared balls into the water and prepare 3 more. Repeat until all dough balls are on the cookie sheet.

In this Weber Demonstration i will share how to cook the perfect lamb shanks on the Weber q in a red wine sauce.
Recipe:
2 lamb Shanks
2 Tbs Tomato purée
2 Onions
3 cloves garlic
2 Carrots
2 Sprigs Rosemary
1 cup Beef stock
1 Tbs Plain Flour
200ml Red wine
Oil to fry
1. To start, preheat baby q to high heat
2. Lower to medium heat 180c
3. Next, Peel and roughly chop the Onions and Garlic, then set them aside.
4. Peel and roughly chop the Carrots then add to a large casserole dish or qware pan along with the Onion, Garlic and Lamb Shanks with a little Oil over a high heat.
5. Stir the contents of the casserole dish or qware pan for about 10 minutes, allowing the vegetables to fry and the Lamb to seal and begin to turn brown.
6. Once the Lamb shanks have browned, carefully remove them from the casserole and put them aside in tin foil.
7. With the Lamb removed, throw in the Plain Flour, Tomato Puree, then crumble in the Beef Stock Cube into the pan. Briefly stir the contents of the casserole then pour in the Red Wine and the leaves of the 2 sprigs of Rosemary.
8. Give everything in the pan a quick stir then return the Shanks back to the pan. Top the contents up with a little water then give everything a good stir.
9. Bring the pan up to simmering point then stick the lid on the casserole. Place in the weber for between 1 and a half to 2 hours, making sure you keep an eye on it whilst it’s cooking.
10. After the cooking time, remove from the Weber, remove the shanks from the casserole then wrap them in foil.
11. Thicken up the sauce in the pan on the Weber stirring it over a high heat until done.
12. When happy, remove the sauce from the hob, take the Lamb Shanks out of the foil then serve up on a plate
The Weber Q1200/ Weber Baby Q doesn't have any big weaknesses. The Weber Q 1200 heats up fast and grills quickly and evenly. This grill does cool down quickly when the lid is open though, so when you're doing your flipping, make it quick. The regulator is attached snugly, and the grease trap is large, easy to take on and off, and comes with a disposable (or reusable) aluminum insert.
At 31 pounds, this is heavy for a tabletop grill. This Weber Baby Q grill has a cast aluminum lid and body which means no rusting or flexing, and a glass-reinforced nylon frame. This grill is sturdy and durable and will likely last a very long time.
This grill is simple to transport at the same time. You can grab it and put it in your boot and then place it on a picnic bench which is simple enough, but you do have to carry it in hand . It is closer to average weight if you consider all of the contenders.
