How To make Berry Teatime Muffins
1 1/3 c All purpose flour
3/4 c Rolled oats
2 ts Baking powder
1/2 ts Baking soda
1/4 ts Salt
1 Egg, beaten
3/4 c Milk
1/2 c Brown sugar, packed
1/4 c Cooking oil
1/2 ts Vanilla
3/4 c Fresh or Frozen Blueberries
Or raspberries : Grease twelve 2 1/2-inch or thirty six 1 3/4-inch muffin cups or line with paper bake cups; set
aside. In a large bowl stir together flour, oats, baking powder, baking soda, and salt. Make a well in center. : In a small bowl combine the egg, milk, brown sugar, oil, and vanilla. Add to flour mixture all at once. Stir JUST TILL MOISENED (batter should be lumpy). Gently fold berries into batter. : Spoon batter into prepared muffin cups, filling each 3/4 full. Bake in a 400 degree oven for 16 to 18 minutes for 2 1/2-inch muffins (10 to 12
minutes for 1 3/4-inch muffins) or till golden. Cool in muffin cups on a wire rack for 5 minutes; remove muffins from cups. Serve warm. : Makes twelve 2 1/2-inch or thirty-six 1 3/4-inch muffins.

I have tried to come up with a refined sugar free muffin recipe and I am really pleased with how these healthy breakfast muffins turned out. These Refined Sugar Free Muffins are soft and fluffy, sweetened with banana and honey and packed with berries and oats. The recipe is very easy and very quick to prepare, made using just one large bowl as ingredients are added one at a time. You can definitely make variations to these breakfast muffins, add different fruits or replace fruits with some bittersweet chocolate or nuts.

Ulta Moist Blueberry Muffins | Blueberry muffins recipe.

Incredibly moist and fluffy with golden domed tops you'll fall in love with one bite!
They are overly sweet, brusting with blueberries and Once you make these you will never look at another blueberry muffin recipe again..
Ingredients
280g/10oz plain flour
140g/5oz white granulated sugar
1 pinch salt
3 teaspoons baking powder
150g/5.2oz frozen blueberries
90ml/ 1/3 cup vegetable oil
1 egg
240ml/1 cup milk
Half tsp of vanilla extract
Baking temperature:
Bake at 200 degrees Fahrenheit/gas mark 3 for 8 minutes then reduce the heat to 170 degrees Fahrenheit for a further 15 minutes.
Full recipe:
Step 1
Gather your ingredients together
Step 2
Sift the flour, baking powder salt and sugar in to a bowl
Step 3
Add the sugar into the bowl
Step 4
In a separate bowl add the eggs to the milk and beat
Step 5
Add the oil to the same bowl as the egg and milk and stir
Step 6
You now have two bowls – one containing the wet ingredients and the other with the dry ingredients. Combine them into one
Step 7
Stir the ingredients until they are just combined
Do not over mix
Step 8
Now add the blueberries to your bowl
Step 9
Gently mix the blueberries in
Step 10
Place your mixture into muffin cases
Step 11
Put the muffins in the oven for approximately 20 – 25 minutes
Step 12
After this time check that the muffins are ready
To tell if your muffins are ready give them a poke with your finger. If they bounce straight back up they are done. Be careful, they'll be very hot.
Allow to cool for 10 minutes and the result should be a delicious crumbly selection of sweet muffins!
