✅ use at least 20lbs of meat, this consomé is good for up to 30 lbs!
✅ add the whole 3 inches of cinnamon and hi her for a more intense flavor!
✅skim skim skim all the impurities through the whole cooking process!
✅toast all the spices before cooking!!!!
Ingredients: up to 40 servings
15-20 lbs beef chuck
5-10 lbs beef short ribs
2 large onions
2 garlic heads
6 roma tomatoes
10 bay leaves
9-10 tbsp coarse salt
For the birria sauce
1 lb about 60 New Mexico Chile pods or guajillo
5 chile pasilla
12 chile de árbol
20 garlic cloves
1 cup white vinagre
2 1/2- 3 inches cinnamon
2 1/2-3 inches ginger root
12 whole cloves
1 1/2 tbsp peppercorn
6 bay leaves
2 tbsp toasted sesame seeds
2 tbsp oregano
2 tbsp cumin seeds
2 tbsp thyme

I am so excited for todays recipe, it's soooo delicious!!! This Mexican traditional dish originates from Jalisco which is where my mom was born. It is typically made with goat meat, throughout the years more people make it w beef as its just as delicious and more accessible. This is a type of dish you make for special occasion in Mexican tradition, such as wedding, Quinceañeras, baptisms etc...today I am sharing my recipe. I hope that you love it!!! INGREDIENTS:
To start the broth-
1 large beef bone cut into pieces
2 beef neck bones
2-3 lbs Chuck Roast
2 Tbls of Chicken Bouillon
2 Tbls of Salt
5 garlic Cloves
1 White onion
For the Sauce-
13 Chiles Guajillos or 2oz
3 Chiles Anchos
3 Chiles Pasilla
3 Roma Tomatoes
5 Garlic Cloves
5 whole cloves
4 Bay Leaves
1/2 Cinnamon Stick
20 whole peppercorns
1 1/2 tbls of Oregano
1 1/2 tbls of ground cumin
1 1/2 tbls of onion powder
2 tbls of Paprika
1 1/2 tbls of salt
2 tbls of chicken Bouillon
1/4 cp of Apple Cider Vinegar
Toppings-
Diced white onion & Cilantro, Lime (enough for however many people your feeding) ;)

Quesa Birria Tacos
Well, this is the most delicious taco I have ever had, if you can even put it into that category. This, as far as I'm concerned, deserves a category of its own. It's more like a quesadilla-taco hybrid, taking the best from both sides. General recipe is as follows (I used non-traditional chilis since I'm a baby with spice but you can do whatever makes you happy):
10-12 assorted chilis or peppers
1/2 cup vinegar
1/3 cup olive oil
1/2 onion
handful cilantro
cinnamon
other assorted spices
salt and pepper
1 12-16oz steak (chuck roast most common)
Oaxaca cheese
Small corn tortillas
1. Combine seeded and charred peppers, vinegar, olive oil, onion, cilantro, and spices in blender. You can get creative with the spices!
2. Sear steak about a minute in an oven-safe pan and then pour over the sauce from above.
3. Cook it in the oven over low heat (about 250-300 F) for several hours until the meat is fork tender. Pressure cooking is also a great option.
4. Dredge the tortillas in your sauce and straight onto a hot pan. Add small cubes of cheese along with your meat, and press the tortilla in half over the fillings to make a meat-filled quesadilla.
5. Dip in your Birria sauce and enjoy. It's mind-blowingly good.

4 puya chili :
2 ancho chili:
1/2 medium white onion
2 ea (1/2 lb) roma tomatoes
5 garlic cloves
1/2 tsp whole cumin :
1 tsp allspice :
1/2 cinnamon stick :

2 TBSP olive oil :
2 tsp dry oregano, Mexican :
2 TBSP white distilled vinegar :
2 cups chili soaking water
