Southern Biscuits

Yield: 1 dozen
Ingredients
2 cups flour
4 teaspoons baking powder
1/4 teaspoon baking soda
3/4 teaspoon salt
2 tablespoons butter
2 tablespoons shortening
1 cup buttermilk, chilled
Directions
Preheat oven to 450 degrees.
In a large mixing bowl, combine flour, baking powder, baking soda and salt. Using your fingertips, rub butter and shortening into dry ingredients until mixture looks like crumbs. (The faster the better, you don't want the fats to melt.) Make a well in the center and pour in the chilled buttermilk. Stir just until the dough comes together. The dough will be very sticky.
Turn dough onto floured surface, dust top with flour and gently fold dough over on itself 5 or 6 times. Press into a 1-inch thick round. Cut out biscuits with a 2-inch cutter, being sure to push straight down through the dough. Place biscuits on baking sheet so that they just touch. Reform scrap dough, working it as little as possible and continue cutting. (Biscuits from the second pass will not be quite as light as those from the first, but hey, that's life.)
Bake until biscuits are tall and light gold on top, 15 to 20 minutes.

Recipe in English:
Ingredients:
-Maida (All-purpose flour) sifted 300g (2+ ½ Cups)
-Milk powder 30g (approx. 5 tbs)
-Makhan (Butter) salted 250g (room temperature)
-Icing sugar 150g (approx. 1 Cup)
-Vanilla essence 1 tsp
-Anda (Egg) 1 (room temperature)
-Cocoa powder 20g (approx. 2 & ½ tbs)
-Instant coffee powdered 1 tsp
-Melted chocolate
-Cherry jam
-Badam (Almonds) roughly chopped
-Khopra (Desiccated coconut)
-Pitsa (Pistachios) roughly chopped 1-2 tbs
-Chocolate chips 2 tbs
-Namak (Salt) 1 pack
Directions:
-In a bowl,add all-purpose flour,milk powder,mix well & set aside.
-In another bowl,add butter,icing sugar & beat well until light fluffy (4-5 minutes).
-Add vanilla essence,egg & beat again.
-Now add dry ingredients & mix well with the help of spatula then beat for a minute.
-Take out half quantity of batter in another bowl for chocolate dough,add cocoa powder,coffee powder & mix until well combined,transfer to a piping bag and drop on baking tray to make biscuit shape.
-In the center,fill in melted chocolate.
-Transfer plain biscuit dough to a piping bag and drop on baking tray to make biscuit shape.
-In the center,fill in cherry jam.
-Take 1 tbs of plain biscuit dough,make a square shape and coat with almonds.
-Take 1 tbs of plain biscuit dough,make a round shape,press gently and coat with desiccated coconut.
-In small bowl,add 4 tbs of plain biscuit dough add pistachio and mix well.
-Take 1 tbs of batter,make a ball,press gently and make a square shape.
-Add pistachios on top & press gently.
-In small ball,add 4 tbs chocolate biscuit dough,add chocolate chips and mix well.
-Take 1 tbs of batter,make a ball,press gently and make a round shape.
-Add chocolate chips on top & press gently.
-On baking tray lined with silicon mat,place prepared biscuits.
Baking: 02:08
-Bake in preheated oven at 170 C for 15 minutes (both grill on).
Baking without Oven:
-In pot,add 1 pack of salt,place steamer stand/wire rack (minimum 2“high) and preheat on medium flame for 10-15 minutes.
-Place prepared biscuits tray,cover and bake in pot on medium flame for 15-20 minutes.

-Ab dry ingredients shamil karein aur spatula ki madad sa ache tarhan mix ker lein phir ek minute kliya beat ker lein.
-Plain biscuit batter ki half quantity chocolate dough kliya alag bowl mein nikal lein,cocoa powder aur coffee powder dal ker ache tarhan mix ker lein phir piping bag mein transfer ker lein aur baking tray per biscuits ki shape bana lein.
-Center mein melted chocolate dal dein.
-Palin biscuit batter ko piping bag mein transfer ker lein aur baking tray per biscuits ki shape bana lein.
-Center mein cherry jam dal dein.
-1 tbs plain biscuit dough lein aur square shape bana ker badam mein coat ker lein.
-1 tbs plain biscuit dough lein aur round shape bana ker gently press ker lein aur khopra mein coat ker lein.
-Chotay bowl mein 4 tbs plain biscuit dough aur pista dal ker ache tarhan mix ker lein.
-1 tbs batter la ker ball bana lein aur gently press ker ka square shape bana lein.

This is a very simple biscuit recipe, but according to Bret, who was a biscuit eating expert, they are the best biscuit ever. They are light, fluffy, moist, a little flaky and absolutely delicious. These are biscuits that will make your Granny proud.

3 tablespoons cold, regular, salted butter (42 grams)
