These buttery and fluffy gluten free biscuits are super easy to make. The key to making fluffy biscuits is to not over mix it. In this recipe, the grated cold butter is a secret weapon! It not only helps the batter to be evenly mixed, the grated pieces also prevent the batter to be over mixed, which will make the batter dense. I hope you will try it out! Happy baking, friends!
Ingredients:
2 1/2 cup Qiao all-purpose gluten free flour
(does not contain xanthan gum)
1/2 teaspoon xanthan gum
(omit if your blend contains it)
1 teaspoon salt
2 tablespoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon cream of tartar
1/2 cup cold butter, grated
1 cup cold buttermilk
2 teaspoons honey
Extra buttermilk for brushing

????What do sweet potato biscuits taste like?
These sweet biscuits are extremely fluffy (almost roll-like) and pillowy soft thanks to the fresh mashed sweet potatoes and whipping cream in the dough! The taste is very similar to a regular whipped cream biscuit (if you've ever had one of those) with a slight hint of sweet potato. The complimentary cinnamon sweet potato butter is the icing on the cake that really gives these sweet potatoes biscuits a layer of cinnamon sweet potato goodness!
How to Make Sweet Potato Puree????
For these biscuits, you'll need a cup of fresh, mashed sweet potatoes. Thankfully, it's super easy to make!
1. First, peel and dice a 1lb sweet potato into small chunks.
2. Next place them in a pot and cover them with water.
3. Bring to a boil and boil under the potato is super tender and can be mashed easily with a fork.
4. Drain and place into a bowl.
5. Mash with a fork until smooth and creamy. (You can also blend if there are a lot of strings.
Biscuit Making Tips
✅Make sure all ingredients are super cold. A cold dough makes for the best sweet potato biscuits! Using cold ingredients will keep your biscuit dough cold as it's getting prepared. Biscuits should always be cold when going into the oven. If the butter starts to melt before it gets into the oven the biscuits will not be as fluffy.
✅Use a super sharp biscuit cutter. I'm guilty of using the realm of glass when I can't find my biscuit cutters but this should b avoided. Biscuit cutters are designed to drive straight down into the dough which prevents the need of having to twist. Twisting the dough can create a seal that prevents the biscuits from rising.
✅Keep the dough slightly wet. A slightly wet dough makes for the best sweet potato biscuits. Use just enough flour to knead the dough and to prevent it from sticking to your hands, but don't overdo it.

How to make Drop Biscuits (Easy!)
Ingredients:
2 cups Self-rising Flour
1 cup Whole Milk
4 tablespoons of Mayonnaise
Non-Stick Cooking Spray
Directions:
Pre-heat the oven to 350*F. Sift the 2 cups of flour into large mixing bowl. Once sifted add the milk and mayonnaise and mix until the ingredients are well combined and batter is smooth. Spray your muffin tin cups with non-stick spray and then add the batter evenly in the muffin tin. Place in the oven and bake at 350*F for 15 minutes. Once the 15 minutes has pasted turn the oven to broil to brown the tops of the biscuits. (Be careful to keep an eye on them so they won’t burn!) Once brown take out and chow down! Enjoy!

Homemade Southern Biscuits are easier to make than you think, and you can make them perfectly on your first try. In fact, you can make them in five easy steps. This is a quick and simple recipe for biscuits at home that bake up perfectly golden on the outside, flaky and buttery on the inside every single time.
This is a great recipe for all of us to have under our belt, but if you’re a lady hailing from the South, it’s pure necessity. It requires few ingredients, and in less than 10 minutes, you’ll have homemade Southern biscuits baking up mile-high in your very own oven.
Now, let’s move on to our 5 easy steps for making Homemade Southern Biscuits from scratch.
1. MIX YOUR DRY INGREDIENTS
Your homemade biscuits will begin with a mix of dry ingredients: all-purpose flour, baking powder and baking soda, and salt. Add the ingredients to a large mixing bowl, and whisk to combine.
2. CUT IN THE BUTTER
Once your dry ingredients are mixed up, it’s time to cut in the butter. But first, you must cut the butter.
Cut the butter into small cubes and scatter across the bowl, then cut the butter into the dry ingredients. You can do this using a pastry blender, or two knives if you want to be super old-fashioned about it. Continue working until it resembles small peas scattered throughout the mix…obviously, they won’t be green.
3. ADD THE MILK
Milk is all you need to bind the ingredients and form the dough. Add the milk, and stir with a sturdy, wooden spoon until evenly incorporated. If the spoon didn’t fully do the trick, just get in there with your hands and lightly knead a few times to bring it all together.
4. CUT THE BISCUITS
Lay the biscuits out on a floured work surface and pat them into a rectangle or dough round, about 1″ thick. From here, you can either cut the biscuits into 2″ squares using a knife or using a round cookie cutter.
5. BAKE
Biscuits bake at a high temperature so be sure to preheat your oven before you get started. This way, you can be confident it is reading true to temperature when it comes time to bake.
Place your Homemade Southern Biscuits on a baking sheet prepared with either parchment paper or a silicone baking mat, and let ’em go in the oven until they are golden-brown, flaky perfection.
