4 oz Vanilla wafers; 30=4oz 2 c Confectioners sugar 2 tb Cocoa powder 1 c Nuts; finely chopped 3 tb Karo light syrup 6 tb Bourbon or dark rum* Roll or food process wafers until they are fine. Add and mix sugar, cocoa and nuts. Add Karo and the Whiskey or Rum (*I prefer Meyers Dark Rum). Form into balls (they will be STICKY!), roll in powdered sugar. Do NOT bake. Can be put in glass covered container and kept in refrigerator. TIP: I store these and Little Fruitcakes in Tupperware Pie Keeper, with layer of waxed paper on bottom. The booze will get in plastic but will air out well! Refrigeration will keep these nice for a good month. Better if "aged" a bit before eating! -----

Bourbon Balls With Right On The Mark - Cooking With The Lovely Kim
The Lovely Kim shows you how to make bourbon balls! Oh yeah with Mark as well.
Bourbon Balls Recipe: 12 oz package of Vanilla Wafer Cookies (for gluten free I used a GF shortbread cookie) 12 oz package of Nestle's semi-sweet chocolate chips 1/2 c. granulated sugar 1/3 c. light corn syrup 2/3 c. bourbon or whiskey (you can also use rum) 1 c. walnuts Additional granulated sugar, powdered sugar, crushed nuts or flax seed to roll the completed balls
Crush cookies in a food processor until they are a bread crumb consistency In a large microwave safe mixing bowl or large measuring cup, melt the chocolate chips in the microwave for 30 sec. stir and continue at 30 sec intervals until completely melted. Mix in the corn syrup, sugar and liquor into the melted chocolate chips until completely combined. Add cookie crumbs a little at a time mixing well until all ingredients are well mixed together. Let mixture sit for 30 minutes to marry (15 min. is sufficient for 1/2 batch). The mixture will have a fudge-like consistency when it is time to roll. Roll mixture into 1 inch balls and roll into sugar, nuts or flax seed. This will keep the balls from sticking together in your container. Place on cookie sheet lined with parchment paper and flash freeze or place in refrigerator for 15 minutes. Store in air tight container. A full batch will make about 48-60 balls depending on how large you roll them.
Stephanie Jaworski of Joyofbaking.com demonstrates how to make Bourbon Balls. The decorative look of Bourbon Balls makes them a festive addition to any Christmas tray. Bourbon Balls are a sweet and chewy, no-bake confection made from a combination of finely crushed cookies (traditionally vanilla wafers), confectioners sugar, unsweetened cocoa powder, chopped pecans or walnuts, held together with a little corn syrup and bourbon. It's easy to like Bourbon Balls since they taste great, they are quick and easy to make, and they only improve with age.
