Here's a meal-in-pie-form - a tasty quiche providing plenty of protein and a flaky crust. This quiche recipe can be eaten hot from the oven or served in cold slices the next day.
Broccoli Cheese Quiche
Mmm.. brunch! I had an extra pie crust in the freezer and decided to make a quiche out of it. This is a super easy recipe for a simple, but delicious breakfast. It only takes a few minutes to put together, but needs to bake and rest for about an hour so plan ahead!
For this recipe, you'll need:
-1 (9) pie crust (frozen, refrigerated, or home-baked)
-1.5 cups of shredded cheese (divided)
-1 cup of broccoli
-4 eggs
-1.5 cups of half-and-half

Spinach, broccoli and cheese quiche
The pastry
Cold unsalted butter 125g
Chilled plain flour 250g
Egg 1
Cold water 1 tbsp approx
The custard filling
Milk 200ml
Double or heavy cream 180ml
Eggs 4
nutmeg a pinch
Salt and pepper to taste

Baby leaf spinach 250g
Broccoli 1 small head
Chopped onion 1/2
Mixed cheeses 250g
Gruyere cheese

Decadent Broccoli, spinach and 3 cheese quiche, everyone knows quiche is French right? Well seems it is Ze Germans who got there first with a flan called Kuchen made with a bread crust instead of pastry. But wait just a second the English (my lot) have recipes dating back to the 14th Century for a pastry tart filled with eggs and cream so we win yay! Wo wo just a minute looks like the Italians have the same recipes dating to the 13th Century Urgh!
Either way it doesn't matter quiche is just perfect for a buffet or a lazy lunch, my quiche has a savoury custard filling with milk and cream, I find that is the best balance of richness without being well too rich. In this quiche recipe I combine broccoli and spinach with a blend of 3 cheeses, gouda, gruyere and gorgonzola but that's the best thing about quiche as you can add so many lovely combinations of flavours, or just go for the classic quiche Lorraine which is from North East France next to Alsace which borders Germany and maybe explains why the similarity in regional foods?

Buy a frozen pre-made pie crust bottom for this quiche recipe and save a ton of time.
Quiches can also be made and cooked ahead of time if you don't want to cook in the morning (think holidays!).
Variations on Quiche Recipes:
Once you know how to cook one quiche, then you basically know how to cook all quiches. Fillings and cheese are interchangeable at the same ratios.
For example, change the Swiss cheese to feta cheese, cheddar cheese, Gouda, whatever cheese you love.
Veggies can be switched as well, just try to keep the filling rate about the same in volume. Eyeballing is fine. That's how ya learn sometimes!
Like bacon or ham? Add it in. Bacon will need to be cooked first and sliced or diced. Ham is already cooked so throw it in with all the other ingredients for this broccoli quiche recipe.
I prefer the creaminess of using half and half but if saving on calories or fat is a concern or you simply don't have it on hand, then substitute milk instead.
Some grocery stores sell cooked vegetables in their buffet. Wanna make a fast and easy quiche? Grab some cooked veggies or antipasto from the salad or breakfast buffet and save time spent chopping in the kitchen.
TIP: Cover pie crust with aluminum foil if it starts to get to dark on the edges but the middle is still not done. Or get fancy with an adjustable pie crust shield.

Ingredients:
-1 pre-made frozen pie crust
-4 medium eggs, beaten
-1 ¼ cup half and half
- 2 cups broccoli florets, chopped into smaller bite size pieces
-4 ounces (1 cup) Swiss cheese, grated
-½ teaspoon salt
-½ teaspoon black pepper
-¼ teaspoon ground nutmeg
Instructions:
-Preheat oven to 375F.
-In a bowl whisk together: eggs, salt, pepper, and nutmeg then whisk in half and half.
-Layer the broccoli and cheese in the frozen pie crust (Do not defrost the pie crust).
-Pour egg mixture over the top (you may have a little extra if your eggs were large - scramble it later if it won't fit.).
-Line a baking sheet with aluminum foil for easy clean up. Place the quiche on top of the baking sheet in case it boils over and also so it's easier to put in and take out of the oven.
-Bake for 45-50 minutes or until a knife in the center comes out clean and the top is turning a slight brown. If you're worried about the crust being too brown, then add a pie crust shield or place aluminum foil around the crust ~20 minutes in.
-Turn on the broiler for a minute or two if the top is not browned (watching carefully - you don't want it to burn).
-Let sit ~ 15 minutes before slicing. Serve warm, cold, or room temperature.
