Breakfast Enchiladas
Here is what you'll need!
Servings: 4-5
Ingredients:
Cheese Sauce
1/3 cup butter
1/3 cup flour
3 cups milk
2 cups (8 ounces) shredded Cheddar cheese
1 (4.5-ounce) can chopped green chiles, undrained
3/4 teaspoon salt
Enchiladas
1 lb. package hot ground pork sausage
2 tablespoons butter or margarine
2 onions, diced
Green pepper, diced
2 tbsp. chopped fresh cilantro
7 large eggs, beaten
salt
pepper
5 8-inch flour tortillas
1 jalapeño, diced
Cherry tomatoes, halved
Instructions
1. Melt butter in a heavy saucepan over medium-low heat; whisk in flour until smooth.
2. Whisking constantly, add milk stir until thickened
3. Add shredded cheddar and shredded jalepeño
4. Cook sausage in a large nonstick skillet over medium-high heat, stirring until sausage crumbles and is no longer pink.
5. Drain well, pressing between paper towels.
6. Melt butter in a large nonstick skillet over medium heat, add green onions and cilantro. Sauté 1 minute.
7. Add eggs, salt, and pepper, and scramble until eggs are cooked but still moist
8. Remove from heat, add 1 1/2 cups Cheese Sauce and sausage.
9. Spoon about 1/3 cup egg mixture down the center of each flour tortilla; roll up. Place, seam side down, in a lightly greased medium baking dish. Pour remaining Cheese Sauce evenly over tortillas.
10. Bake at 350° for 30 minutes or until sauce is bubbly. Serve with desired toppings.

Bake temp: 380 degrees (F) for 15 to 20 minutes
Ingredients
Oil
1 1/2 Tbs butter
8 eggs + 1/2 cup heavy whipping cream (salt pepper to taste)
8 oz of chorizo of choice + 2 medium potatoes
11 Corn tortillas
1/2 8oz can tomato sauce
3/4 cup water
2 tomatoes
2 medium Anaheim pepper or can of Hatch green chili
1/2 chopped white onion
2 garlic cloves
1 tsp chicken bouillon (salt pepper to taste)
1 can pinto beans
3 cups of cheese (mozzarella + Mexican cheese blend)
If you refrigerated your casserole for next day use
Bake at 350 degrees
Cover with foil and bake for 30 minutes- then remove foil and continue to bake for another 15 to 20 minutes, until you see all cheese has melted, you know the bubbling.

- 2 jalapenos, charred and skinned
- 1/4 cup water (60g)
- 4 cloves garlic
- 3 tablespoons vegetable oil (68g)
- 1/4 cup sour cream (52g)
- 1/2 cup mayonnaise (120g)
- Salt to taste
Chilaquiles Rojos:-
-4 guajillo chilies
- 3 ancho chilies
- 1/2 yellow onion diced
- 2 serrano chilies sliced
- 5 cloves garlic rough chopped
- 28 oz can crushed san marzano tomatoes
- 1.5 cups chicken stock (335g)
- 2 teaspoons mexican oregano
- Salt and pepper to taste
-14 yellow corn tortillas cut into wedges
-1 Avocado, diced
- Cotija cheese for topping *queso fresco is traditional*
- Cilantro for garnish
- 4 Eggs, poached
Chilaquiles Verde:
- 4 chicken thighs, boneless skinless cooked and shredded
- 12 yellow corn tortillas cut into wedges
- 1lb (450g)tomatillos
- 2 serranos
- 2 jalapenos
- 1/2 sweet onion
- 1/2 bunch cilantro
- 7 cloves garlic
- Juice of 1 lime

Good morning guys and Welcome to Wednesday's video. While I was editing I realized I had too much footage to truly condense and would have to do this day in 3 parts....sorry about that I had no intention of making my first dedicated cooking video in this way but I really hope you enjoy! On our website I have a page dedicated to beerbellied Recipes and thought id start calling our cooking videos just that too. Not all will include beer in the ingredients as this one was breakfast it does not..but I do have many ones that do. what are you thoughts?
