Welcome back to the woods! If you're in the mood for a super cozy, simple, nutritious and satisfying veggie stew, AND if you love onions, this is such a good one.
I love making Bulgarian recipes for my partner because they remind him of his grandma. I never got to meet her but rumour has it we would have gotten along like peas in a pod! I have a lot to learn about Bulgarian food and I can't wait to share it all with you.
This is based on a Bulgarian recipe called Лучена Яхния.
Here's the onion stew recipe for two people
2 large onions
6 cloves garlic
1 carrot, grated or finely minced
1 celery stick, finely minced
1 tomato, roughly chopped
1/2 red pepper
1 tsp sugar or honey
1/2 tsp dried savoury
Splash of red wine (optional)
250 ml vegetable stock (you can also use chicken stock)
Serve with crusty bread!
*Note: I've also seen this made with chicken! But I often like to keep things vegetarian.
