How To make Butterscotch Oat Squares
2 cups oats
quick or instant
1 cup brown sugar :
packed
1/2 cup melted butter
1/2 tsp vanilla
Mix oats and brown sugar, mix in butter and vanilla.
Divide mixture evenly in 2 ungreased 8-inch square pans, spreading evenly, or in a single pan for thicker, more chewy squares. Bake at 375F for about 10 minutes (15 minutes if in a single pan) or until golden-brown. Squares will be soft, but will harden when cool.
Allow to cool for 5 minutes, then mark in squares with a sharp knife. Loosen edges and allow to cool before removing from pans.

Oat bar:
3/4 cup unsalted butter
1 1/2 cups brown sugar
1 egg
1 egg yolk
1 1/2 tsp vanilla
1 3/4 cup all purpose flour
2 1/4 cups rolled oats
3/4 tsp baking soda
3/4 tsp salt
Fudge:
1 1/2 cups chocolate (we used semi sweet chocolate chips)
1 1/4 cups sweetened condensed milk
1 1/2 tablespoons butter
3/4 teaspoons vanilla
Directions:
Cream the butter and brown sugar together. Once mixed, add the eggs and vanilla and combine to form a wet batter.
In a separate bowl whisk the flour, oats, baking soda, and salt together.
Add the dry ingredients 1/3rd at a time to the wet, making sure to scrape down the sides of the bowl in between additions.
Once mixed, add 2/3rds to a 8×8 baking dish. Spread the oat mixture to create an even layer.
In a pot over medium heat, add the butter, sweetened condensed milk, and sugar. Stir until all the ingredients melt and you get a smooth, lava like consistency.
Remove the chocolate fudge from the heat and allow to cool a couple minutes before stirring in the vanilla.
Pour the fudge over the oats in the baking tray and smooth out until even.
Once the fudge is smooth, add the remaining oat mixture in chunks on top of the chocolate.
Bake at 350 degrees for 25-30 mins.

Butterscotch bars are like brownies that are chewy and gooey. The thing I really like about this recipe is that it's easy to make, tastes delicious and you cut it into bars which makes it a one pot dessert.
Ingredients:
1/2 cup butter
2 cups brown sugar, firmly packed
2 eggs
1 tsp. vanilla extract
1 cup flour
2 tsp. baking powder
1/2 tsp. salt
1 cup sliced almonds, (optional)
Directions:
Preheat oven to 350 degrees F.
Melt butter over medium low in a sauce pan and then add the brown sugar. Stir until combined.
Turn off the heat and remove to cool for a minute. The add eggs one at a time. Stir each egg into the sugar mixture until it is completely mixed in before add the second egg.
Next, add the vanilla and stir to combine. In a separate bowl combine the flour, baking powder and salt.
Add a spoonful at a time of the flour mixture into the sugar mixture, stirring well before adding the next spoonful.
Pour the mixture into a 9 x 13 greased baking dish. I used Pam spray. Sprinkle almonds top.
Bake for 20 to 25 minutes. Let cool before serving. Makes about 2 dozen bars. Store covered.
