How To make Calves Liver Stroganoff
2 tb Plus
2 ts -reduced calorie mayonnaise
1 1/4 lb Calves liver, thinly sliced
1/2 c Chopped onions
1 c Chopped mushrooms
1/2 c Dry white wine
1 c Plain lowfat yogurt
1/2 ts Salt
1/4 ts Pepper
1 ds Worcestershire sauce
1 tb Imitation bacon bits
2 c Cooked noodles
Brown liver in margarine. Remove from skillet, and keep warm on a platter in the oven. Cook mushrooms and onions until tender, adding water if necessary to prevent drying. Add wine, bring to a boil, reduce heat, add remaining ingredients and cook, stirring, until heated through. To serve, divide noodles evenly onto 4 serving plates. Divide liver and place over noodles. Top with sauce.

???? One of Dave's favorite meals is liver and onions. Dave says that if you know how to make it right, it can be delicious. Our houseboat neighbor, Billie, also loves liver, so we invited her over for a full homemade dinner. See what Karen thinks of Dave's Wow Recipe.
???????? LIVER AND ONIONS INGREDIENTS:
Sliced calves liver (we get it in the frozen food section)
Bacon
Bacon grease or lard or oil
Flour
Salt & Pepper
Sweet Onions
Butter
???? RECIPE:
1. Melt 3 tablespoons of butter in large pan.
2. Slice up at least 3 onions and sauté in pan with melted butter on medium low & cover (stir occasionally).
3. In the meantime, cook bacon in another pan until crispy; remove from pan, cool, crumble (we like using a skillet). Keep the bacon grease.
4. Add additional bacon grease, lard or oil to have enough oil in pan to just barely cover the liver – heat to medium high (adjust heat as needed while cooking liver)
5. In a flat pan add of cup a flour and 1 teaspoon of salt & pepper
6. Place the liver in the flour and flip over to coat it on all sides.
7. When the grease is up to temperature, place the liver in the pan so they do not overlap.
Note: drop a pinch of flour in the grease and if it starts to sizzle, it’s ready.
8. Cook the liver for about 45 seconds. Flip over and cook for another 45 seconds. Adjust heat as needed.
9. Remove from grease and place on top of onions and cover.
10. Steam liver in onions for 4 – 5 minutes.
11. Remove liver to dinner plate, cover with sautéed onions and place crumbled bacon on top.
12. ENJOY!
????????CUCUMBER SALAD INGREDIENTS:
2 Cucumbers
Sour Cream
Morton’s Nature’s Seasoning
???? RECIPE:
1. Peel cucumbers and slice thin.
2. Place in bowl and add 1 cup sour cream
3. Add about 2 tablespoons of Morton’s Seasoning
4. Mix all together. Adjust sour cream and seasoning to taste.
5. Best if it sits for about 1 hour.
6. Enjoy!
