Recipe
.Peeled Almonds 200 g
.Sugar 25 g
.Powdered Sugar 140 g (90g cookies dough + 50g to cover)
.Water 15 g
.Egg White 30 g (1 medium size egg)
.Candied Orange 10 g (orange zest as an alternative)
.Salt 1 g
.Step 1: Toast the almonds at 170 °C /340 °F in a static oven for 8 minutes, when they are cold they are ready to be used.
.Step 2: Prepare the almond cookies dough and let it rest in a bowl covered with a cloth for about 90 minutes at room temperature in order to dry the dough.
.Step 3: form the Ricciarelli with the classic oval shape and thick about 1 to 2 centimeters and pass them in plenty of icing sugar, then place them on a baking sheet covered with parchment paper and cover them with a cloth for about 2 hours to further dry the dough and make sure they keep the shape once in the oven.
.Step 4: Bake in a static preheated oven at 150 °C / 300 °F for 15 minutes, once out of the oven do not touch them for about 10 minutes because they are breakable, then move them on a tray to cool completely, store them as normal cookies, they will be good and soft for at least a week, enjoy!
