How To make Chana Dhal (Or Dal)
8 oz Chana dhal
1 ts Turmeric
1/4 ts Salt (optional)
2 Green chilies, split
Lengthwise 1 tb Corn oil
1 ts Mustard seed
1 Medium onion, finely sliced
1 Clove garlic, finely sliced
1/2 ts Cayenne pepper
Wash peas in cold running water. When water runs clear set aside to soak for 4 hours. Drain peas and put in sauce pan wit turmeric, salt, and green chilies. Add enough water to cover by 1 inch, and bring to a boil. Partly cover pan, reduce heat and simmer for 1 hour or until water has been absorbed and peas are tender but not mushy. Add more water if necessary Meanwhile, heat corn oil in a skillet. Add mustard seeds and cover pan. Saute for 2 minutes. Uncover pan, add onion and garlic, fry until golden. Stir in cayenne pepper and cook for 30 seconds. Add cooked spices to the peas. Stir cook for 2 minutes. Serve hot.

-Lehsan paste (Garlic paste) 1 tbs
-Tamatar (Tomato) chopped 1 large
-Lal mirch powder (Red chili powder) 1 tsp or to taste
-Namak (Salt) 1 tsp or to taste
-Dhania powder (Coriander powder) 1 tsp
-Haldee powder (Turmeric powder) ½ tsp
-Hari mirch (Green chilies) chopped 2-3
-Chana daal (Split bengal gram) 1 & ½ Cups (soaked & boiled)
-Pani (Water) ½ Cup or as required
-Garam masala powder 1 tsp
Tadka:
-Oil ¼ Cup
-Curry pata (Curry leaves) 9-10
-Kashmiri lal mirch (Kashmiri red chili) powder ½ tsp
-Hara dhania (Fresh coriander) chopped
-Adrak (Ginger) julienne
Directions:
-In pot,add oil,cumin seeds,cloves,cinnamon stick and mix.
-Add onion and fry until light golden.
-Add garlic paste and mix well.
-Add tomato and mix well.
-Add red chili powder,salt,coriander powder,turmeric powder and mix well.
-Add green chilies and mix well,cover and cook on low flame until tomatoes are soft.
-Add boiled split bengal gram and mix well.
-Add water,mix well and cook for 2-3 minutes.
-Add garam masala powder,cover and cook on low flame for 8-10 minutes then mix well & set aside.
For Tadka:
-In small frying pan,add oil and heat it,add curry leaves and mix.
-Turn off the flame,add Kashmiri red chili powder and mix well.
-Add tadka on cooked split Bengal gram.
-Add fresh coriander,ginger & serve!

-Hari mirch dal ker mix karein aur dhak ker halki ancch per tamatar naram hunay tak paka lein.
-Boiled chana daal shamil karein aur ache tarha mix ker lein.
-Pani dal ker mix karein aur 2-3 minutes kliya paka lein.
-Garam masala powder dal ker dhak dein aur halki ancch per 8-10 minutes kliya paka lein phir ache tarhan mix karein & side per rakh dein.
For Tadka:
-Chotay frying pan mein oil dal ker garam karein aur curry pata dal ker mix ker lein.
-Chulha bund ker dein aur Kashmiri lal mirch powder dal ker ache tarhan mix ker lein.
-Tadka ko cooked chana daal per dal dein.
-Hara dhania aur adrak dal ker serve karein.

-Sabut kali mirch (Black peppercorns) 3-4
-Zeera (Cumin seeds) 1 & ½ tsp
-Pyaz (Onion) sliced 2 medium
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tsp
-Chana daal (Split bengal gram) 1 & ½ Cup (soaked for 3-4 hours)
-Namak (Salt) ½ tsp or to taste
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Dhania powder (Coriander powder) 1 tsp
-Haldi powder (Turmeric powder) ½ tsp
-Dashi chicken powder ½ tbs

Prepare Daal Fry Tarka:
-Ghee ¼ Cup
-Sukhi lal mirch (Dried red chillies) 4-5
-Lehsan (Garlic) chopped 1 tbs
-Hari mirch (Green chillies) sliced 2-3
-Kashmiri lal mirch (Kashmiri red chilli) powder ½ tsp
-Tamatar (Tomatoes) chopped 2 large
-Kali mirch (Black pepper) crushed ¼ tsp
-Hara dhania (Fresh coriander) chopped 1-2 tbs
-Hara dhania (Fresh coriander) chopped
Directions:
-In a pot,add cooking oil,cinnamon stick,bay leaf,black peppercorns,cumin seeds & mix well.
-Add onion & fry until light golden.
-Add ginger garlic paste & mix well.
-Add soaked split lentil gram,mix well & cook on medium flame for 3-4 minutes.
-Add salt,red chilli powder,coriander powder,turmeric powder,chicken powder,mix well & cook for 1-2 minutes.
-Add water,mix well & bring it to boil.
-Remove scum,cover & cook on low flame until tender (15-18 minutes).
-Discard bay leaf & set aside lentil for later use.
Prepare Daal Fry Tarka:
-In a wok,add ghee & let it melt.
-Add dried red chillies,garlic,green chillies & mix well.
-Add Kashmiri red chilli powder & mix well.
-Add tomatoes,mix well and cook until tomatoes are soft (2-3 minutes).
-Now add cooked lentil,mix well & fry on high flame until oil separates (3-4 minutes).
-Add black pepper crushed & fresh coriander.
-Garnish with fresh coriander & serve!

-Pani dal ker ache tarhan mix karein aur ubal anay dein.
-Scum ko nikal lein aur dhak ker halki ancch per daal gul janay tak paka lein (15-18 minutes).
-Tez patta ko discard ker dein & daal ko bad mein use kernay kliya side per rakh dein.
Prepare Daal Fry Tarka:
-Karahi mein ghee dal ker melt ker lein.
-Sukhi lal mirch,lehsan aur hari mirchein dal ker ache tarhan mix ker lein.
-Kashmiri lal mirch powder dal ker ache tarhan mix ker lein.
-Tamatar dal ker ache tarhan mix karein aur tamatar naram ho janay tak paka lein (2-3 minutes).
-Ab cooked chana daal dal ker ache tarhan mix karein aur tez ancch per oil alag ho janay tak fry ker lein (3-4 minutes).
-Kali mirch crushed aur hara dhania dal dein.
-Hara dhania sa garnish ker ka serve karein!

Urad Dal -1 Cup
Chana Dal -1/4 Cup
Wash And Soke For 30 Minutes To Overnight As Per Convenience
Boil Dal For 4-5 Whistles On Low To Medium Hert Or Till Dal Is Soft Along With
Water - 4 Cup
Salt
turmeric -1/2 tsp
For Tadka
Ghee - 2 tbps
cumin - tsp
Ginger - tsp
garlic - tbps
saute for fev minutes
onion - 1
saute for 2-3 minutes
turmeric - tsp
rad chilli powder - 1 tbps
Coriander powder -tbps
saute a minute,add little water to aovid burning
Tomatoes - 2
green chilli
add little water and let it cook till oil separates
add boiled dal and also slightly mash the dal
add hot water if required to adjust consistency
cook on low for 5-10 minutes
add salt if required
garnish with coriandar leaves
