How To make Char Flavoured Potatoes and Green Beans
2 md Tomatoes, chopped
5 md Potatoes, cubed
2 1/2 c Green beans, cut into 1 1/2
- inch pieces 1 tb Basil
2 ea Whole dried red chilies
4 ea Sprigs fresh coriander
1/2 ts Turmeric
1/8 ts Asafetida
1 ts Salt
1 ds Black pepper
6 tb Ghee
2 2/3 c Water
Place all the ingredients into a large heavy bottomed pot in the order in which they are listed. Bring to a boil over a moderate heat, reduce heat & boil for 5 minutes. Reduce the heat further & gently boil, partially covered, for 20 to 25 minutes. Check that the water is not evaporating too quickly. You may have to add more water. To finish cooking, raise the heat to fairly high & fry quickly, without stirring, to allow the crust to form & just begin to char. Remove from the heat & let stand, covered for 5 minutes. Easy Green Beans and Potatoes with
Smoked Turkey Necks Recipe
2- 12oz Frozen Bags of Fine Green Beans
10-12 small fingerling or baby potatoes (You can use Red potatoes)
3-4 medium or large smoked turkey necks
1 cup of frozen diced Onions and bell peppers
with celery pieces
1 tablespoon of minced garlic
1 teaspoon (season to taste) Wildman's Hickory Smoke Salt
1-2 tablespoon of Better Than Bouillon Roasted Vegetable Base
Approximately 1 teaspoon (Season to taste) Cajun Seasoning
1/2 stick of unsalted butter
1/2 teaspoon (season to taste) cracked ground black pepper
2-3 tablespoons of olive oil
In a large pot, add water half way and add your smoked turkey necks. Next, add your Better than Bouillon Roasted vegetable base to the pot. Cook your turkey necks for 1 hour- 1 1/2 hours on Medium heat. Next, wash potatoes and cut them into quarter size pieces. Place them in cold water to prevent browning and set aside.
In another large pot, pour your oil, and add your frozen/ thawed bell peppers mixture, potatoes, and minced garlic. Sprinkle a dash of salt a d stir. Cook potatoes covered for approximately 7-10 minutes on medium heat. Next add your 2 bags of frozen green beans, stir, add your black pepper, 1/2 stick of butter, cajun seasoning, and hickory smoke salt. Mix together, then carefully pour your smoked turkey necks and broth into pot with green beans and potatoes. Stir allowing the turkey necks to be submerged under the broth and green beans. Cook covered for 45 minutes or until your turkey necks are coming off the bone. Turn off stove and let rest for 15 minutes before serving.
