How To make Cheesy Tuna& Noodles
8 3/8 ozs chicken flavor ramen noodle soup
1/2 tsp olive oil
2 c frozen mixed vegetables
thawed
1 clove garlic :
minced
10 3/4 ozs low-fat cream of mushroom soup
1 1/2 c fat-free mozzarella cheese grated
3/4 c skim milk
1/8 tsp black pepper
6 ozs tuna in water :
drained and flaked
Cook noodles according to package directions. Add seasoning packets and drain off most liquid; set aside. In a 10" skillet over medium heat, in hot oil, cook vegetables and garlic 2 minutes, stirring often. Stir in mushroom soup, mozzarella cheese, milk, and black pepper. Cook until cheese melts, stirring occasionally. Stir in reserved noodles and tuna. Heat through, stirring occasionally.

Trini Tuna Casserole Recipe
Yield: 6 to 8 Servings
INGREDIENTS
Elbow Macaroni - 400g
Heavy Cream - 250 ml
Evaporated Milk - 250 ml
Eggs - 2 large
Margarine - 4 oz
Onion - 3/4 cup (finely chopped)
Pimento Pepper - 1/3 cup (finely chopped)
Garlic - 1/8 cup (finely chopped)
Tuna Chunks in Water - 3 cans (drained)
Lime Juice - 1 tbsp
Scallions - 1/4 cup (finely chopped)
Sliced Mushrooms - 1/3 cup
Whole Kernel Corn - 1 can
Salt - to taste
Black Pepper - to taste
Cheese - 1/2 lb (grated)
METHOD
1. Fill medium stock pot with 8 cups of water and season with 1 tbsp of salt.
2. Heat over high heat bringing water to a boil.
3. Add macaroni and cook until al dente (about 8 minutes).
4. Drain, rinse with cold water and set aside.
5. Preheat oven to 350°F.
6. Whisk together heavy cream, evaporated milk and eggs.
7. Set aside.
8. Heat medium sauce pan over medium heat.
9. Add margarine and allow to melt.
10. Once melted, add onion, pimento and garlic.
11. Allow to cook for 2 minutes.
12. Reduce heat to low and add tuna, lime juice, chive, mushrooms and corn.
13. Mix until fully incorporated.
14. Add milk mixture, 1/2 of the grated cheese and season with salt and black pepper.
15. Mix until fully incorporated.
16. Allow to cook for 5 minutes ensuring to stir continuously.
17. Immediately pour into greased baking dish.
18. Bake for 30-35 minutes.
19. Allow to cool for 15 minutes before eating.
20. Enjoy!

Christmas Eve for us is just not the same without a bowl of pasta with tuna. This recipe is inspired by Steve’s uncle. Steve’s Zio Iginio whom we lost last month was born and raised in Trento which is the Northern part of Italy. He lived in the mountains right on the border of Germany and made this dish for us all the time. This is my take on his pasta with tuna and inspired by him and hopefully honoring him today. Rip Zio Jimmy we all miss you and love you. This recipe makes 2 large portions or 3 small. You will need:
Ingredients:
1.5 large cans of tuna — discard the oil or water
5 tablespoons butter
tablespoon olive oil
pepper to taste
250 grams short pasta of choice cooked in boiling salted water
2 ladles of pasta water
chilli pepper oil + fresh parm optional
**Please Note- You can use as much or as little tuna as you like and this would be lovely with salmon too. Please adjust the pasta water accordingly to how creamy you like your dish. The pasta water should be as salty as the sea and this is your only chance to flavor the pasta.
Directions:
In a skillet on medium heat add the butter and olive oil and make sure it shimmers.
Drain the oil or water from the cans of tuna and add it into the butter and olive oil.
Break it up and cook until the tuna “ pops ” and it’s nice and golden. Add some pepper to taste and take it off the heat.In the meantime make sure you are boiling your pasta of choice in salted water until al-dente. When the tuna is nice and golden take it off the heat completely, once the pasta is finished boiling add it in with the pasta starchy water which is liquid gold.Top it off with some fresh Parm or chilli oil. Cheesy Tuna Noodle Casserole Wacky Style
Ingredients:
1 Bag of noodles, your choice, we like to use whole wheat
Water to boil the noodles in
3 cans of tuna in water, do not drain, add with water
2 cans of cream of mushroom soup or whatever kind of soup you want
2 cans of milk (use the soup can to measure)
1 can of peas, drained and rinced
1 teas. season salt
1/2 teas. onion powder
1/2 teas. garlic powder
1/3 Cup grated parm. cheese
Pepper to taste
1 teas. parsely
Shreaded cheese for topping
Top with some shreaded cheese of your choice we normally use Mexican blend.
Pre heat oven to 350
Cook noodles until just tender, do not completely cook them, drain and rince the noodles
In cassarole dish mix together, milk, tuna, soup, all spices and seasonings, parm cheese then add in noodles and peas. Mix well, then cover with foil and bake in oven for about an hour uncover and stir about 30 minutes after baking. Top with shreaded Mexican Cheese, serve & enjoy!

Ingredients:
350g (12.35oz) spaghetti or other pasta of your choice
500g (17.6oz) tomato sauce
2 tuna cans (225g/8oz), drained
2-3 tablespoons olive oil
1 onion
3 garlic cloves
60g (2oz) sun dried tomatoes
1/2 chili pepper
1/4 bunch parsley
Directions:
1. Bring a large pot of salted water to a boil.
2. Chop onion, dried tomatoes and parsley. Slice chili pepper and crush garlic.
3. In a large skillet heat olive oil, sauté chopped onion for 3-4 minutes, add crushed garlic, sliced chili, chopped dried tomatoes and cook for 3-4 minutes.
4. Add tomato sauce, season with salt and pepper, stir, cook for 2 minutes. Add drained tuna and cook 1-2 minutes.
5. cook according to package directions. Drain and transfer to the pan.
6. Stir until combined. Turn the heat off, add chopped parsley and serve.
