How To make Chicken Alla Valdostana
2 large chicken breasts
2/3 cup chicken stock
flour 4 thin slices prosciutto
1/4 cup olive oil
4 thin slices fontina cheese
1/4 cup (1/2 stick) butter
salt and freshly ground pepper
Flatten chicken breasts, cut in half, and dust lightly with flour. = Saute in a skillet with oil over moderately high heat for 1 minute on = each side until golden brown. Transfer to a plate, discard oil in = skillet. Add butter and broth into the skillet and heat mixture over = moderate heat. Return chicken to skillet, top each piece with prosciutto = and cheese and cook the mixture, covered, until the cheese is melted and = bubbly. Transfer the chicken to a heated platter, reduce sauce over = moderately high heat until it is thickened and season with salt and = pepper. Pour the sauce over the chicken.

RICETTA FACILE E VELOCE POLLO ALLA VALDOSTANA EASY AND FAST RECIPE POLLO ALLA VALDOSTANA
Il pollo alla valdostana è una ricetta semplice, veloce ed incredibilmente saporita, qualche sera fa avevo delle fettine di petto di pollo da preparare e non volevo farle in maniera classica (al vino o al limone), avevo in frigo dell’ottimo taleggio e del prosciutto cotto ed allora ho deciso di metterli assieme ????
La carne alla valdostana è leggermente diversa dalla mia ricetta, intanto prevede la fontina (ma io preferisco il taleggio) ma diciamo che come per tutte le ricette, potete personalizzarla con gli ingredienti che preferite o con quelli che avete a disposizione in quel momento.
Ora andiamo insieme ai fornelli e prepariamo il pollo alla valdostana ????
INGREDIENTI PER 2 PERSONE:
4 fette di petto di pollo
2 cucchiai di olio extravergine d’oliva
pochissima farina
80 gr taleggio (o il formaggio che preferite)
2 fette di prosciutto cotto
q.b. sale
pochissimo prezzemolo tritato
In una padella larga ho messo l’olio e nel frattempo ho passato le fettine di pollo nella farina, le ho private della farina in eccesso e poi messe a cuocere su fiamma vivace.
Appena saranno colorite salatele appena (tra formaggio e prosciutto cotto il sapore non mancherà ???? ), rigiratele e ricopritele con una fetta di prosciutto cotto ed il formaggio.
Abbassate la fiamma, coprite con coperchio e lasciate cuocere ancora qualche minuto, giusto il tempo di far fondere il formaggio ????
Servite il pollo alla valdostana ancora caldo e filante, magari spolverizzato con un po’ di prezzemolo tritato e… buona scarpetta!!!

Cheesy Chicken Recipe (Chicken Valdostana)
John and I are making this northern Italian recipe that consists of chicken cutlets topped with prosciutto and fontina cheese cooked in a tasty wine sauce.
Ingredients:
3 thick Chicken Breasts, sliced in half lengthwise
6 slices of Prosciutto Crudo
12 thick rectangular pieces of Fontina Cheese
2 Tbsp. Butter, unsalted
1/3 cup White Wine (we used Chardonnay)
1/2 cup Chicken Stock
All Purpose Flour
Salt and Black Pepper
Extra Virgin Olive Oil
Directions:
Season flour with salt and black pepper. Cut the chicken breasts lengthwise to create 6 thinner chicken cutlets and season with salt and pepper. Dredge the seasoned chicken cutlets in the flour and set aside.
Add olive oil and one tablespoon of butter to a large frying pan. Once the butter has melted, lower the heat to medium and add in the chicken cutlets. Fry for about 5-6 minutes on each side or until golden brown. Remove the chicken cutlets from the pan and set aside on a clean dish.
In the same frying pan, add the remaining butter and two tablespoons of flour. Whisk until fully combined. Reduce to low heat and pour in the white wine. Whisk together until it has thickened.
Pour in the chicken stock and whisk together until fully mixed. Place the chicken cutlets back into the frying pan. Let them simmer for about 2 minutes.
Place a slice of prosciutto on top of each chicken cutlet (or leave out) and top with two slices of fontina cheese. Cover the pan with a lid and allow to simmer for 5-6 minutes, until the cheese has melted.

Serves: 4-6
Ingredients:
2 chicken breast sliced lengthwise
1/2 cup extra virgin olive oil
4 tablespoons butter
8 tablespoons flour
2 teaspoons salt
1 teaspoon pepper
2 cups sliced mushrooms
1/2 cup wine (dry white wine)
1 cup organic chicken stock
4 tablespoons butter (additional)
2 tablespoons flour (addition to sauce)
8 slices Fontina cheese (1/2 inch thick)
4 slices of prosciutto
3 tablespoons parsley
Directions:
Pound 4 pieces of chicken breast and hold aside.
Put flour on a separate platter, add salt, pepper and mix.
Put olive oil, butter in a heated sauce pan. Coat chicken with salt and pepper, coat both sides with flour, add to sauce pan and saute for 5 minutes each side. Remove and plate chicken, put mushrooms into the sauce pan, stir and cover. When browned add wine, chicken broth, salt, pepper, more butter and raise heat, cover and simmer for 3-4 minutes until it bubbles. Add 2 tablespoons of flour to add thickness and let saute for a few more minutes.
Put 1 slice of prosciutto and 2 slices of Fontina cheese on each cutlet. Put chicken back into sauce, leave in sauce until cheese melts. Top it with sauce and simmer for 5 minutes and less. Plate it and add parsley. You can use the sauce on pastas or anything else.

Filetti di pollo alla Valdostana: il piatto filante e appetitoso!
I filetti di pollo alla Valdostana al forno sono perfetti per una cena facile, veloce e sfiziosa!
INGREDIENTI
8 filetti di pollo
100g di prosciutto cotto
160g di mozzarella
Pangrattato
30g di parmigiano
Olio d'oliva
Sale
PREPARAZIONE
Unite il pangrattato con il parmigiano. Impanate i filetti di pollo nel mix di pangrattato.
Trasferiteli sulla teglia e conditeli col sale. Versateci sopra un filo d’olio e infornate a 190° per 10 minuti.
Successivamente poggiate su ogni filetto il prosciutto e la mozzarella. Cuocete per altri 10 minuti.
