How to make Mexican green Rice- Arroz Verde - Green Rice - A Pati's Mexican Table Recipe
I was always used to eating red rice but now since I have tried this recipe. Green rice has now become one of my favorites.
Ingredients:
2 cups long or extra long grain white rice or jasmine rice
2 poblano chiles ( about 11 ounce) seeded, and cut in chunks
1/2 cups water, plus 2 tbs if needed
2/3 cup cilantro leaves
2 garlic cloves
1 1/2 teaspoon kosher or coarse sea salt, or to taste
2 1/2 - 3 cups broth from Mexican chicken broth or veggie broth
3 tablespoons vegetable oil
1/3 cup coarsely chopped white onion
1 tablespoon fresh lime juice or more to taste
1/2 cup crumbled queso fresco ( optional )
instructions:
- soak the rice in a bowl of how water to cover for about 5 minutes
drain in a sieve and rinse under cold water until the water runs clear; drain well
- pure the chiles, 1/2 cup water, cilantro, garlic, and salt until smooth in a blender or food processor
pass the puree through a sieve into a larger measuring cup; note the amount and set aside.Pour enough chicken broth into another measuring cup to make 4 cups total. keep both liquid cups separate.
- heat the oil in a medium saucepan over medium high heat until hot but not smoking. add the rice and cook, stirring often, until the color changes to milky white about 3 to 4 minutes. add the onion and sauté until slightly softened, 1 to 2 minutes
- pour in the puree and cook until is darkens, thickens , and has been mostly absorbed the rice, 2 - 3 minutes. stir in the chicken broth and. lime juice, bring to a rolling boil, cover, and reduce heat to lowest possible setting. cook until most of the liquid has been absorbed but there is still some moister in the pan, about 15 minutes. The rice should be cooked and tender. if not but but all the liquid has been absorbed add the the tablespoons of water; cover and cook for little longer. Let the rice rest , cover for about 5 minutes.
- fluff the rice with a fork and serve with crumbles cheese if using

Delicious chicken with almonds. Oaxacan dish known as ALMENDRADO.
To make Almendrado you will need:
4 big ripe roma tomatoes
1 quarter of a medium onion
2 garlic cloves
half of a spoon of oregano
5 whole kernels of all spice
6 whole kernels of black pepper
3 dry chile guajillo without the seeds and without stem
4 cloves
1 inch of a stick of cinnamon
1 piece of French bread about an inch thick
2 table spoons of sesame seeds
2 table spoons of blanched slivered sliced almonds
half of cup of capers chopped
half of cup of green olives ( stuffed with pimento)
half of cup of golden raisins or your favorite kind
Half of cup of pickled jalapenos cut in slices.
1 whole chicken or 8 pieces of your favorite chicken meat
2 tablespoons of of pork lard or any vegetable oil or vegetable lard
4 cups of chicken broth (use the broth of your boiled chicken)
Boil your chicken in 5 to 6 cups of water (do not let the water dry out, add more if necessary) until cooked. Add 1 tablespoon of chicken bullion powder. Boil until cooked.
take it out and cut it in pieces if using whole chicken. Now Brown the chicken in pork lard.
Let's work on the sauce now.
Put 2 cups of chicken broth in a soup pot (using the broth from chicken you boiled)
start to saute ONE BY ONE in a little bit of oil: tomatoes, onion, garlic, oregano, all spice, black pepper, chile guajillo, 4 gloves, cinnamon, French bread. Let all that rest for 10 minutes.
Now put all these rested ingredients into the blender and give it a very good grind. Pass this sauce through a sifter. Using a spoon,( press with a little bit of strength) to push through the liquid part of the sauce into a bowl. Toss what is left in the sifter after finish running sauce through. Pour sifted sauce to browned chicken.
put 2 tablespoons of sesame seeds and 2 table spoons of almonds into a blender using 2 cups of chicken broth. Grind it really good and also pour it into browned chicken.
Now is time to add on top of all that:
Chopped half of cup of capers, sliced half of cup of olives made into little rings,
half of cup of golden raisins or your favorite ones, half of cup of jalapeno peppers, and last but not least half of cup of almonds. Let it simmer for about 10 minutes and enjoy over rice and a side of your favorite beans.

Te sorprenderás, pero con lo famoso que es el pollo con almendras en los restaurantes chinos, yo nunca lo he comido en casa.
No sé si es un plato cantonés o si es una adaptación de algún plato chino para el público español. Who knows. ????????♀️
Este es el plato que más me habéis pedido, pero tengo que admitir que mi receta ha sido un poco una improvisación. Sé que las almendras van salteadas con todo y que el plato original no lleva huevo.
Pero es la yema del huevo derretida junto con el pollo, las verduras y el arroz. Buff... ¡Sonaba demasiado bien!
Y en cuanto a las almendras, las puedes incorporar en el salteado, pero a mi personalmente me gusta cómo quedan por encima porque me mola la presentación y me parece que se mantienen más crujientes.
**Receta para 2-3 personas**
*Ingredientes: 1 pechuga de pollo, 1 cebolla, 1 pimiento verde, 1 pimiento rojo, 3-4 huevos (depende de cuántos seáis), 1 puñado de almendras, salsa de soja, 3cs de Maizena, 1/2cp curry, 1/4cp de pimienta negra, aceite de oliva y sal.
*Elaboración:
1. Corta el pollo en láminas finitas.
2. Mézclalo con 1/2cp de sal, 1/2cp curry, 1/4cp de pimienta negra, 1cs Maizena, 2cs de aceite y un chorrito de salsa de soja.
3. Deja la mezcla anterior marinando y corta las verduras.
4. Saltea el pollo unos 4-5 minutos y resérvalo.
5. Saltea en la misma sartén las verduras unos 3-4 minutos.
6. Mientras se saltean las verduras, aprovecha para preparar la salsa. En un bol mezcla 1/2 vaso de agua, 1/4 vaso de salsa de soja y 2cs de Maizena.
7. En la sartén dónde están las verduras, incorpora el pollo y la mezcla de la salsa.
8. Baja el fuego al mínimo y ves removiendo hasta que espese.
9. Pica unas almendras.
10. Haz un huevo a la plancha.
