2 Chicken breasts, split,
Skinned and boned 1 c Celery, coarsely chopped
1 c Onion, coarsely chopped
3 Jalapeno(s), fresh minced
1 tb Sesame oil, dark
1/2 ts Celery seed, whole
8 ts Water chestnuts, sliced
(canned as a last resort) 2 tb Chili powder, home made
(prepared if you must) 1/2 ts Cumin
1 tb Oregano, fresh (3/4 t if
Dried) 1/4 c Red wine, (dry-ish)
4 Cloves garlic, crushed
3 cn Tomato sauce
1/2 ts Curry powder
1 tb Szechwan chili sauce
Oil for saute Contributed to the echo by: Janice Norman Chicken "Ya-hah!" Saute the celery, onions and garlic in the oils while you cut the chicken into bite-sized pieces. When the onion is translucent add the chicken, celery seed, jalapenos and water chestnuts. Saute until chicken is barely done... add the remaining ingredients, cover and simmer for an hour. Serve over either cornbread, rice or pasta... they're all good. Enjoy!

CHICKEN MARSALA INGREDIENTS
-2 lbs. Chick Breast
-1 cup All-Purpose Flour
-16 oz. Chicken Stock
-Salt and Pepper to taste
-A sprig of Fresh Thyme
-1 lb. Baby Portobello Mushrooms
-Extra Virgin Olive Oil
-3 oz. Salted Butter
-4 oz. Marsala Wine
-3 Cloves Garlic
-Sprig of Parsley

Cooking Instructions
1. Trim and Pound Chicken.
2. Add EVOO to the pan and heat up ( coat pan about ¼ in).
3. Smash Garlic and add to the pan and brown.
4. Dredge chicken in flour and add to the pan.
5. On medium heat brown chicken on both sides ( around 2 mins each side).
6. Remove Chicken.
7. Add Mushrooms.
8. Deglaze pan with Marsala Wine.
9. Add Thyme.
10. Season with Salt and Pepper.
11. Add 75% of the Chicken Stock (12 oz.).
12. Add 2 oz. Flour to the remaining Chicken Stock and mix well together and add to the pan.
13. Add Butter.
14. Cook 10 mins on lower simmer while stirring and incorporate the butter into the sauce. Do not let it get too thick, you can thin out with chick stock if needed.
15. Top with Chopped Parsley.
16. You’re Done!

We’re going to make chicken and sausage gumbo also known as Gumbo Ya-Ya and we’re going to make it with BEER! Welcome to Gumbo Ya-Ya à la bière. That “à la bière” part is Cajun for “with beer!” Actually, it’s French for “with beer,” but ain’t nobody making rules here today…not with language and not with our Gumbo. This is the please-everyone gumbo template recipe that can be created for most you plan to feed and modified for those souls who want to live with a bit of zest and Zydeco! Let’s get started.
I grew up in Louisiana. And, like “jambalaya, and a crawfish pie” we love our “filé gumbo!” Every family in Louisiana has their go-to gumbo recipe.
